Recently, preparing stew with tin tomatoes have become a trend in Nigeria, especially if you don't have a blender or enough time to start preparing the tomatoes paste on your own.

Ingredients

  • 2 Pcs of tin tomatoe puree - 210g each

  • 2 medium sized onion bulb(chopped)

  • Vegetable oil - 120ml

  • 10 pcs of fresh pepper (blended)

  • 1 tablespoon of curry

  • 1 sachet of Onga stew spice

  • 6 cloves of garlic (blended)

  • Salt (to taste)

  • 3 Pcs of seasoning cubes

  • Chicken

Let's start by steaming our meat, put the meat on the fire, add chopped onions, 2 seasoning cubes, blended garlic and pepper. Allow the meat to boil for 5 minutes then put it into a filter to drain off the stock as we'll fry the meat.

Place the pan on fire, allow the water in it to dry off then add oil, allow to heat before adding the meat. The meat should dry till it has a golden brown colour then put it back into the filter.

Put a new pot on the fire till it dries off, add the vegetable oil and allow it to heat, add a little salt(optional) then add the chopped onion first before the tomato puree. Fry until you have a paste.

Add the stock from the meat, pepper, seasoning cubes, curry, Onga stew spice and garlic. You can add your meat if you are using beef or goat meat but hold off for a bit if you are using chicken so it won't get too soft. Allow it to boil for 5 minutes.

If it's too thick you can add water to a desired quantity, taste for salt, add the fried chicken now then cover and allow it to boil for five more minutes.

Your stew is ready to be served. You can eat this stew with rice, spaghetti or yam.
