There is a local burrito joint to me that does fantastic food by the name of Taco Mazama. I made a bash at what I thought their hottest (packs a punch but not insanely hot) salsa was. It turned out splendidly and was very similar to theirs.

Ingredients

1 can of sweetcorn, drained

1 can of black beans (pinto or black eyed will also do), rinsed and drained

2 small tomatoes, seeded and chopped finely

1 medium red or white onion, chopped finely

Handful chopped oregano. Or heaped teaspoon of dried stuff

2 scotch bonnets, seeded and chopped

Juice of a lime plus a dash of white wine vinegar

Pinch or two of salt and some ground black pepper

Makes a big healthy bowlful. It's excellent and way better than theirs I would say, give it a bash. The scotch bonnets of course can be swapped out for something a little less fierce... Or more fierce if you are that way inclined!!
