¡Comencemos!
Sighs or meringues are one of my favorite homemade treats. When I started practicing baking recipes my purpose was to learn how to make them without so many complications, I lost count of all the failed attempts, techniques used and not to mention the ingredients discarded for not achieving what I really wanted. Surely when you hear the word SUPIROS you can immediately identify what it is, but you don't dare to try them because at the time of cooking it's a disaster.
Today I want to dedicate this recipe on the eve of her birthday to my dear friend @lolysacc I am totally sure that by watching this step by step you will be able to achieve the sweet you love so much. Let's get started!
• 100 gr Claras de huevos
• 200gr azúcar
• Pizca de sal
• Esencia al gusto
• Colorante cantidad necesaria
• Manteca para la bandeja
- 100gr egg whites
- 200gr sugar
- Pinch of salt
- Essence to taste
- Dye quantity needed
- Butter for the pan
A considerar:
Quedan hermosos.
To consider:
- The ideal ratio of Swiss meringue is one part egg white to two parts sugar. For example, 100 grams of egg whites will be twice as much sugar as 200 grams. In this way you can obtain the quantity you want.
- The utensils must be free of fat.
- You can flavor with lemon zest.
- Use alcohol-free essences, preferably those that are thick.
- Separate the egg whites and yolks. The yolks can be used in another preparation. The eggs should be at room temperature.
- Weigh the ingredients, this way you get the ideal balance of the recipe.
- Put the egg whites in a water bath together with the sugar and pinch of salt, the bowl should not touch the water, stir constantly until the crystals disappear. Carry out this process calmly.
- Before going to the mixer, it is necessary to beat manually to incorporate air into the mixture, remember that we want a silky cream, not an unwieldy foam that dries out and is not at all pleasant to the palate.
- Once this process is finished, proceed to beat for 8 to 10 minutes until the balloon is marked or detaches from the bowl, we also know it is ready when you see quite firm peaks.
- Add the essence halfway through the beating and if you wish 2 tablespoons of powdered sugar, this will give more body to the mixture.
- Prepare a buttered pan and begin to pipe with the desired nozzle. Preferably they should all be the same size.
- To add color, add gel coloring, combine colors to taste.
- Leave them in the tray for 12 hours to dry in a cool temperature.
- After this time, take them to the oven for 2 minutes at a very low temperature, remember that they have already gone through a dehydration process that will facilitate the baking, besides this process helps them not to crack or break. They are beautiful.
