ENGLISH
- 1 condensed milk (390 gr)
- 1 cup milk.
- 1 cup sugar.
- 6 eggs.
- 1/2 of water (or liquid milk)
- Vanilla to taste.
Well, there are several ways to prepare the quesillo, one of the easiest is to add all the ingredients in the blender and prepare the mixture, however our blender is damaged so we decided to make it with a mixer.
So in a bowl we are going to add the condensed milk, the cup of milk and the cup of sugar, we take the blender and we are going to mix these ingredients, you will notice that little by little it will take a thicker texture as they are integrated.
After this we are going to add the 1/2 of water (or milk) you can use the same measure as the can or carton of condensed milk, after this we continue mixing with the mixer, you will notice that the mixture will become very liquid, so we add the vanilla to taste.
In a separate cup we place each egg to make sure they are not bad and then we add them to the mixture one by one and beat until we incorporate the 6 eggs.
With our mixture ready, we are going to prepare the caramel.
We place the mold of the quesillera in our kitchen at normal heat (if you do not have quesillera, you can use a high cake pan) we place half a cup of sugar in the quesillera, and we will let it caramelize until it is a little dark, then we turn off the heat, add the mixture to the edge of the measure (not to the top of the quesillera) and cover it.
For cooking there are several options, the first one is to put the cheesemaker in the oven in a bain-marie, the second one is to put it in a bain-marie in a pressure cooker.
The one we use at home is to put the quesillera in a larger pot in a bain-marie, add weight to the quesillera and cover, the cooking will be done on the normal stove.
In this way we will let the quesillo cook for about 30-45 minutes, after this we will lower it and let it rest until it cools down, then we will put it in the refrigerator for about 3-4 hours so it will be harder.
Then, unmold it and that's it! We have a delicious quesillo for snacking, this sweet is perfect for many occasions, in Venezuela it is used a lot for birthdays.
