Quiero compartir con ustedes una receta de una sopa muy nutritiva que suelo preparar desde siempre, sobre todo cuando alguien en casa está enfermo, y se siente mal física o emocionalmente. También sirve para recargar energía, recuperar fuerzas y por supuesto, curar el alma.
Se trata de una simple, sencilla y deliciosa crema de auyama. La favorita de mi hija Isabella desde que era bebé, ella todavía se pone muy feliz cuando ve que la estoy preparando y se la come con gusto, además de que cuando se siente mal le hago esa sopita y enseguida recupera el ánimo.
Esta última vez que la hice era yo la que me sentía un poco indispuesta del estómago, creo haber comido algo con desagrado y no me sentí bien los días siguientes, así que recurrí a la infalible sopita de auyama y ese fue mi alimento por varios días hasta que me sentí mejor.
Siempre que hago esta sopa me gusta hacer algún caldo de pollo primero, normalmente uso las patas de pollo, ya que son muy nutritivas y es bien sabido que son ricas en colágeno. También si tengo los huesos de la pechuga de pollo se los agrego. Este caldo, condimentado con ajo, cebolla y cilindro son la base perfecta para mi sopa de auyama que en sí misma ya es muy nutritiva y sustentadora.
Sin más preámbulos les presento mi receta de:
Sopa de Auyama que Cura el Alma
Ingredientes:
Para el caldo base usaremos patas y huesos de pollo, ajo, cebolla y cilantro.
Para la crema usaremos un pedazo de auyama de más o menos ½ kilo y adicionalmente agregaré batata dulce, que se puede sustituir por ocumo, papas o algún otro tubérculo que ayude a darle más espesor a la crema.
Preparación:
En una olla de presión colocaré las partes del pollo junto a la cebolla, el ajo y el cilantro, condimentar allí mismo con sal y orégano, cubrir con agua y poner a cocinar por media hora contando desde que la olla de presión comience a presionar.
Cuando el caldo esté listo lo colamos separando los huesos o las partes del pollo que utilizamos y en el caldo vamos a colocar la auyama cortada en pedazos se puede retirar la piel, en este caso yo tambien utilice batata dulce así que le agregué los pedazos de batata dulce y lo puse a cocinar hasta que ambas verduras estuvieran bien blanditas.
Cuando la auyama y la batata estén bien cocidas, las pase a la licuadora junto al caldo para licuar y hacer la crema, licuar bien hasta que todo esté bien mezclado.
Revisamos que el punto de sal esté correcto, condimentamos a nuestro gusto y ya está lista la crema de auyama.
Para completar la sopa, yo aproveché para cocinar en el agua del caldo un muslo de pollo que absorbió todo el sabor del caldo y caí en la tentación de un plátano maduro para acompañar el almuerzo reconfortante.
Para mi es algo bastante simple y cotidiano, pero es una preparación que nos levanta el ánimo siempre, y yo la hago con gusto, se que les hace bien a los míos, me trae lindos recuerdos y nos cura el alma.

I want to share with you a recipe for a very nutritious soup that I always prepare, especially when someone at home is sick, and feels bad physically or emotionally. It also serves to recharge energy, regain strength and of course, heal the soul.
It is a simple, easy and delicious pumpkin cream. My daughter Isabella's favorite since she was a baby, she still gets very happy when she sees me preparing it and eats it with pleasure, plus when she feels bad I make this soup and she immediately recovers her spirits.
This last time I made it, I was the one who felt a little sick to my stomach, I think I ate something unpleasant and I didn't feel well the following days, so I resorted to the infallible pumpkin soup and that was my food for several days until I felt better.
Whenever I make this soup I always like to make some chicken broth first, I usually use chicken feet, as they are very nutritious and it is well known that they are rich in collagen. Also if I have the bones from the chicken breast I add them. This broth, seasoned with garlic, onion and cilantro are the perfect base for my pumpkin soup, which in itself is very nutritious and sustaining.
Without further ado I present my recipe for:
Pumpkin Soup that Heals the Soul.
Ingredients:
For the base broth we will use chicken feet and bones, garlic, onion and cilantro.
For the cream we will use a piece of auyama of more or less ½ kilo and additionally I will add sweet potato, which can be replaced by ocumo, potatoes or some other tuber that helps to give more thickness to the cream.
Preparation:
In a pressure cooker I will place the chicken parts together with the onion, garlic and cilantro, season right there with salt and oregano, cover with water and put to cook for half an hour counting from the time the pressure cooker starts to press.
When the broth is ready we strain it separating the bones or the parts of the chicken that we use and in the broth we are going to place the pumpkin cut in pieces you can remove the skin, in this case I also used sweet potato so I added the pieces of sweet potato and I put it to cook until both vegetables were very soft.
When the pumpkin and sweet potato are well cooked, pass them to the blender together with the broth to blend and make the cream, blend well until everything is well mixed.
Check that the salt level is correct, season to taste and the cream of pumpkin soup is ready.
To complete the soup, I took the opportunity to cook a chicken thigh in the broth water, which absorbed all the flavor of the broth, and I was tempted to add a ripe plantain to accompany the comforting lunch.
For me it is something quite simple and everyday, but it is a preparation that always lifts our spirits, and I make it with pleasure, I know it is good for my family, it brings me nice memories and heals our soul.
