Has it ever happened to you that your body asks for a special food and until you eat it you can't stay still? Well, for days I have been wanting to eat black beans but well done, they should be creamy, soft and with a seasoning as similar to my mom's, well today was the day to prepare them and I am happy to say that I got them as I wanted.

Let me explain the context, in Venezuela I made my caraotas well and they were delicious, one usually makes them with the sofrito and without more additions, here in Brazil I learned to add bacon and calabresa, a sausage very used in the kitchen here so I have been adapting to that style, also they usually sauté all the ingredients in the pressure cooker and then put the black beans without softening, water and put them to cook. That is very tasty indeed but it does not create a creamy broth, but more watery and I'm not a fan of that texture in the beans or grains in general, so I longed for a more my style beans but with the flavor of bacon that is really very rich and today I liked, so I got the ultimate recipe for the beans this time and here I present them.

The ingredients I used to prepare half a kilo of black beans were a large onion, a large green bell pepper, five large cloves of garlic, cumin, black pepper, oregano, salt, a piece of bacon and a whole calabrese.

I started by washing the beans, removing any impurities such as stones, or damaged kernels, then I soaked the beans for a few minutes, about half an hour. After that I put the beans in the pressure cooker with water to cover and that's all to soften them.

While the beans are softening I chop the seasonings, for example I chop the onion, the paprika and crush the garlic, I like to add a little salt when crushing the garlic so that they are well crushed, I also chop the calabrese and the bacon in not very big pieces, because this way they are better distributed when serving.

I put to fry the calabrese and bacon, so that they release their own fat and then remove them from the pot to fry the seasonings and absorb the flavor, we put the cumin, black pepper and oregano, these seasonings are the secret of my mom, she does not cook without cumin and oregano, in fact that aroma makes me very nostalgic, but well we continue....

I opened the pressure cooker carefully to check the beans and they were super soft! I was so happy because that's what I wanted, I took the opportunity to add the seasoning and mix everything, I added a little more water because I saw that it was missing, I let it boil again and after 5 or 10 minutes they were ready.

This is my definitive recipe, I know that from now on I will prepare them in this way because they were at the exact point that I like, I also prepared a good amount to keep in plastic containers and freeze to eat during the week because the beans are a very nutritious and yielding food.

And that was all friends I hope you have a nice weekend, thanks for your visit.
