Ieri sera non ero particolarmente affamato...
Così, come spesso accade, apro il frigo e decido di mangiare quello che capita.
La scelta sarebbe sicuramente ricaduta sul classico uovo fritto... quando mi sono ricordato di una ricetta che avevo visto qualche giorno prima...

Così prendo i seguenti ingredienti:

  • 1 patata bella grossa;
  • 2 uova;
  • Cipollina;
  • 1 pomodoro;
  • prezzemolo;
  • Olio, sale e pepe;
  • Parmigiano grattugiato.

Procedimento:

  1. Inizio a far bollire la patata in acqua salata. Appena è pronta la taglio a metà senza togliere la buccia!
  2. Con un cucchiaino comincio a scavare per ricavare uno spazio che conterrà gli altri ingredienti (attenzione a questa fase perchè rischiate di rovinare la patata);
  3. In una padella ho messo a soffriggere la cipollina a pezzetti, il pomodoro, ed il resto della patata asportata nel punto precedente. Ho aggiunto poco olio , sale e pepe.
  4. Subito dopo ho messo il composto dentro le patate avendo cura di lasciare lo spazio per l'uovo.
  5. Apro le uova con cura nello spazio ricavato nelle patate e aggiungo sale, prezzemolo, pepe e parmigiano.
  6. Inforno il tutto.
  7. Nell'attesa (pochi minuti) metto a riscaldare una padella e, appena è pronta, con un cucchiaino cospargo il parmigiano. Appena si è sciolto, lo levo dalla padella e lo modello leggermente (e velocemente dato che si solidifica subito)...
  8. Esco le patate, le adagio sopra il parmigiano e... le divoro subito!!!

Last night I was not particularly hungry ...
So, as often happens, I open the fridge and decide to eat what happens.
The choice would certainly fall on the classic fried egg ... when I remembered a recipe I had seen a few days before ...

So I take the following ingredients:

  • 1 big thick potato;
  • 2 eggs;
  • Cipollina;
  • 1 tomato;
  • parsley;
  • Oil, salt and pepper;
  • Grated Parmesan cheese.

Method:

  1. Start to boil the potato in salted water. As soon as the cut is ready in half without removing the peel!
  2. With a teaspoon I start to dig to get a space that will contain the other ingredients (attention to this phase because you risk ruining the potato);
  3. In a pan I fry the chopped onion, the tomato, and the rest of the potato removed in the previous point. I added a little oil, salt and pepper.
  4. Immediately after I put the mixture inside the potatoes taking care to leave the space for the egg.
  5. I open the eggs carefully in the space obtained in the potatoes and add salt, parsley, pepper and parmiggiano.
  6. Inforno the whole.
  7. While waiting (a few minutes) I start to heat a pan and, as soon as it is ready, with a spoon sprinkle the parmiggiano. As soon as it has melted, I remove it from the pan and lightly model it (and quickly as it solidifies immediately) ...
  8. I go out the potatoes, place them on the parmesan and ... I immediately devour them!
