My husband and I are not very much into dairy products. In fact, the only diary product we used to eat was yogurt. But recently, because I am pregnant, I tried to incorporate more diary products into my diet. One food item I discovered, that we both enjoy very much, is the cottage cheese pancakes. They are ridiculously easy to make and enjoyed both by kids and by grown ups! Not to mention the benefits of cottage cheese, which are numerous. Here are some of them:
Hoping I stirred up your interest in trying these cottage cheese pancakes, here is the recipe: 3 eggs, one cup cottage cheese, 1 tb spoon vanilla extract, 2 tb spoons honey/maple syrup, one cup flour, 1 tea spoon backing powder, ½ tea spoon salt. Mix the dry ingredients separately and pour over the wet ones. Combine and pour with a small ladle into the frying pan, after spraying some cooking oil or melted butter.
