Hoy quiero compartir con ustedes la receta de mi dulce preferido: El flan de leche. Hacer este post me llena de una mezcla de nostalgia y alegría. Recordar el olor a azúcar quemada que inundaba la cocina de mi infancia es viajar en el tiempo, ya que mi mamá salía hacérnoslo a mi hermano y a mi. Aprendí a realizarlo siendo casi una niña, y luego cuando crecí por un tiempo este fue mi emprendimiento, hasta que los precios me lo permitieron, ya que los ingredientes para hacerlo son sumamente costosos en mi país.Hoy en día, lograr poner este postre sobre la mesa lleva un esfuerzo enorme, pero el resultado vale cada segundo y cada recurso invertido. Aquí les dejo mi receta paso a paso, con los secretos que aprendí vendiéndolos y que aseguran que quede perfecto: cremoso, firme y con un caramelo brillante.

🛒 Ingredientes necesarios

Para este flan mediano (ideal para compartir en familia) vamos a necesitar:

Leche condensada: 1 lata (aproximadamente 397 gramos).

Leche entera: La misma medida de la lata de leche condensada (puedes usar leche fluida o reconstituida a partir de leche en polvo bien espesa).

Huevos: 5 huevos enteros (si son muy pequeños, utiliza 6).

Esencia de vainilla: 1 cucharadita generosa para aromatizar.

Azúcar blanca: 1 taza (para preparar el caramelo).

Agua: 3 cucharadas (opcional, para ayudar a fundir el caramelo).

👩‍🍳 Modo de preparación (Paso a Paso)

  1. El secreto está en el caramelo

El alma de un buen flan es su caramelo. Pon la taza de azúcar junto con las tres cucharadas de agua directamente en el molde que vas a utilizar.

Llévalo a fuego medio-bajo. No lo descuides ni un segundo. Verás cómo empieza a burbujear y a cambiar de color. Cuando tome un tono dorado oscuro (como el de la miel), retíralo del fuego. Con mucho cuidado y usando paños para no quemarte, gira el molde para que el caramelo cubra no solo el fondo, sino también las paredes del recipiente. Déjalo enfriar y endurecer.

  1. La mezcla perfecta

En mi época de emprendimiento aprendí que no hace falta batir en exceso para que el flan no se llene de aire si lo que buscas es una textura ultra cremosa.

En la batidora (o en un bol usando un batidor de mano) agrega los 5 huevos, la lata de leche condensada, la medida de leche entera y la cucharadita de vainilla. Bate solo lo necesario, hasta que veas que todos los ingredientes se han integrado por completo y no queden rastros de huevo.

  1. El colado (Un truco de oro)

Antes de verter la mezcla en el molde caramelizado, pásala por un colador fino. Este paso es crucial porque elimina los hilos del huevo o cualquier impureza, garantizando que la textura final en la boca sea completamente lisa y suave.

  1. La cocción: Al "Baño de María"

Tradicionalmente en Cuba lo hacemos en la olla de presión para ahorrar combustible.

Tapa muy bien el molde del flan para que no le entre ni una gota de agua.

Coloca el molde dentro de una olla más grande con agua (el agua debe llegar más o menos a la mitad de la altura del molde del flan).

Si usas olla de presión, ponle la tapa y cocínalo durante 25 a 30 minutos a partir de que coja presión. Si lo haces en una olla común tapada, tardará entre 50 y 60 minutos a fuego medio.

❄️ El toque final: Paciencia

Cuando pase el tiempo de cocción, apaga el fuego y deja que pierda el vapor de forma natural. Saca el molde del agua y espera a que se enfríe completamente a temperatura ambiental. No intentes desmoldarlo caliente o se romperá por completo.

Una vez frío, llévalo al refrigerador por un mínimo de 4 horas (lo ideal es dejarlo de un día para otro). Para servirlo, pasa un cuchillo fino con cuidado por los bordes, coloca un plato hondo boca abajo sobre el molde y, con un movimiento firme y rápido, dale la vuelta. ¡Verás cómo cae todo ese caramelo líquido por encima!

Remembering the smell of burnt sugar that used to fill my childhood kitchen is like traveling back in time, back when my mom would make it for my brother and me. I learned how to make it when I was practically a child, and later, when I grew up, it actually became my small business for a while—until prices skyrocketed, as the ingredients to make it are extremely expensive in my country. Today, successfully putting this dessert on the table takes a huge effort, but the result is worth every single second and resource invested. Here is my step-by-step recipe, along with the secrets I learned from selling them to ensure it turns out perfect: creamy, firm, and with a glossy caramel.

🛒 Required Ingredients

For this medium-sized flan (perfect for sharing with the family), we will need:

Condensed milk: 1 can (approximately 397 grams).

Whole milk: The same measurement as the condensed milk can (you can use fluid milk or reconstituted milk from very thick milk powder).

Eggs: 5 whole eggs (if they are very small, use 6).

Vanilla extract: 1 generous teaspoon for flavoring.

White sugar: 1 cup (to prepare the caramel).

Water: 3 tablespoons (optional, to help melt the sugar).

👩‍🍳 Preparation Method (Step-by-Step)

  1. The secret is in the caramel
    The soul of a good flan is its caramel. Place the cup of sugar along with the three tablespoons of water directly into the mold you are going to use.

Bring it to medium-low heat. Do not take your eyes off it for a single second. You will see it start to bubble and change color. When it turns a deep golden hue (like honey), remove it from the heat. Very carefully, using kitchen towels so you don't burn yourself, swirl the mold so the caramel covers not only the bottom but also the sides of the container. Let it cool and harden.

  1. The perfect mix
    Back in my entrepreneurial days, I learned that you don't need to over-blend if you want an ultra-creamy texture, as over-blending fills the flan with air.

In a blender (or in a bowl using a hand whisk), add the 5 eggs, the can of condensed milk, the whole milk measurement, and the teaspoon of vanilla. Blend only as much as necessary, until you see that all the ingredients are fully integrated and there are no traces of egg left.

  1. Straining (A golden trick)
    Before pouring the mixture into the caramelized mold, pass it through a fine strainer. This step is crucial because it removes any egg strands or impurities, guaranteeing that the final texture in your mouth is completely smooth and silky.

  2. Cooking: The "Baño de María" (Water Bath)
    Traditionally in Cuba, we make it in a pressure cooker to save fuel.

Cover the flan mold very tightly so not a single drop of water gets inside.

Place the mold inside a larger pot with water (the water should reach about halfway up the sides of the flan mold).

If you are using a pressure cooker, put the lid on and cook it for 25 to 30 minutes after it reaches pressure. If you do it in a regular covered pot over medium heat, it will take between 50 and 60 minutes.

❄️ The Final Touch: Patience

Once the cooking time is up, turn off the heat and let the steam release naturally. Take the mold out of the water and wait for it to cool down completely to room temperature. Do not attempt to unmold it while it's hot, or it will completely break apart.

Once cold, place it in the refrigerator for a minimum of 4 hours (ideally overnight). To serve, carefully run a thin knife around the edges, place a deep plate upside down over the mold, and with a firm, quick motion, flip it over. You'll see all that liquid caramel cascade over the top!
