Un postre, una haza帽a
Hacer un flan en Cuba no es solo seguir una receta: es resolver un rompecabezas. Cada ingrediente que ven en esta foto representa una vuelta por las cafeter铆as, una llamada a un familiar afuera, o esa suerte bendita de encontrar leche condensada el mismo d铆a que ten铆as huevos en casa. Aqu铆 no hay "ir al supermercado y listo"; aqu铆 hay paciencia, cari帽o y mucha resistencia (demasiada).
Hoy quiero compartirles este flan que hice con mis propias manos, con la satisfacci贸n de quien logr贸 algo que en otro pa铆s ser铆a sencillo, y aqu铆 se convierte en peque帽a victoria.
Los ingredientes:
馃 Huevos (4)
馃 Leche condensada (una lata peque帽a)
馃嵓 Un poquito de leche en polvo
馃崿 Az煤car
馃尶 Vainilla
馃 Una pizca de sal
馃嵂 Caramelo (az煤car quemada, hecha en casa, sin atajos)
驴C贸mo lo hice?
Prepar茅 el caramelo primero, dejando que el az煤car se derritiera lento hasta lograr ese tono dorado que se ve brillando en el plato.
Ba帽茅 el molde con el caramelo caliente, cubriendo bien el fondo.
Bati los huevos con la leche condensada, la leche en polvo disuelta, el az煤car, la vainilla y la sal hasta integrar todo en una mezcla suave.
Vert铆 la mezcla sobre el caramelo y cocin茅 a ba帽o de Mar铆a durante 40 minutos, con paciencia, hasta que cuaj贸.
Lo dej茅 enfriar y luego al refrigerador, para desmoldar con cuidado y que el caramelo cayera como manto sobre el flan.
El resultado
Ese brillo del caramelo, esa textura tersa... no hay palabras. Es ese sabor que nos recuerda a las meriendas de las abuelas, a los cumplea帽os sencillos, a la mesa cubana de mantel de cuadros como la de la foto. Un flan no es solo postre en Cuba: es memoria, es familia, es la dulzura que insistimos en mantener viva aunque todo se complique.

Making flan in Cuba isn't just about following a recipe, it's about solving a puzzle. Every ingredient you see in this photo represents a trip to a special store, a call to a relative abroad, or the blessed luck of finding condensed milk the same day you happened to have eggs at home. There's no "just go to the supermarket" here; there's patience, love, and a lot of resilience.
Today I want to share this flan I made with my own hands, with the satisfaction of someone who achieved something that would be simple elsewhere, and here becomes a small victory.
The ingredients:
馃 Eggs (4)
馃 Condensed milk
馃嵓 A little powdered milk (just what I could find)
馃崿 Sugar
馃尶 Vanilla
馃 A pinch of salt
馃嵂 Caramel (homemade burnt sugar, no shortcuts)
How I made it
I made the caramel first, letting the sugar melt slowly until it reached that golden-reddish tone you can see shining on the plate.
I coated the mold with the hot caramel, covering the bottom well.
I whisked the eggs with the condensed milk, dissolved powdered milk, sugar, vanilla, and salt until smooth.
I poured the mixture over the caramel and cooked it in a water bath, patiently, until it set.
I let it cool, then refrigerated it, and carefully unmolded it so the caramel would cascade over the flan like a blanket.
The result
That caramel shine, that silky texture... there are no words. It's the kind of flavor that brings back memories of grandma's afternoon snacks, simple birthdays, a Cuban table with a checkered tablecloth just like the one in the photo. Flan isn't just a dessert in Cuba, it's memory, it's family, it's the sweetness we insist on keeping alive even when everything else gets complicated.
