Twenty-four days ago, I was making Cheesy Pumpkin Sauce With Vermicelli. That recipe was so good that I wanted to make another recipe but with a little spin. Instead of Vermicelli, I am using Macaroni and also adding carrots to the mix.
I know that Fall is long overdue, but as someone who likes the fall season, there's always a reason to make my day fall-seasoned theme. And that includes eating a meal with ingredients that are easily found during the Fall. So, it is why, today, I am writing about Pumpkin MacNCheese.
As I write this, I am still looking for ways to spice up my cooking and plating. I think that in the world of food and cooking blog, the presentation matters. So, I am currently building wood plating sets for my cooking blog. I choose wood because I think it does not Overpower the food inside the plate. Instead, it gives it a homey look that I want in my cooking and cooking blog. But for now, we're going to have to use porcelain plating, which I am not fond of it.
Unlike my previous recipe, I also added some beef bacon bits into the mix in this recipe. Unfortunately, I can not find fresh bacon since I am now living in a majority Muslim community. Though, I'd add bacon bits to it than beef bacon.

Essentially, the instruction is still the same. But you can always modify the volume based on your desire. As you can see from the picture above, I added more butter, more cheese into the mixture compared to the previous recipe. Don't forget to mix it very well. It is even better if you have a blender or hand blender since the texture will be smoother than the one I demonstrated.
So that's all about my recipe this time. I hope you can try it at home and modify it to your liking. You can also add diced onion for a more flavorsome smell, but that's okay if you don't. For more sprinkles of happiness, you can also add oregano. It's my favorite herbs that I add everywhere into my cooking. Perhaps you have your favorites, don't be afraid to add that. Though if you want to keep it classic, oregano is off the list.
In the future, I want to have a proper kitchen set and adequate kitchen tools. So far, I have a good pair of knives, a newer chopping board, and recently re-decorated our kitchen and made it look cleaner. Maybe once we finish re-decorating and re-organizing the kitchen, I can finally make a video instead of written texts.
