Hello everyone,today am going to be sharing with you one of my favourite Nigerian snack called puff-puff.i joined an online catering class about a week ago and was so eager to practice most of the things ive learnt.
Basically its a wet bread dough snacks that is deep fried ,and goes with any soft drink.
INGREDIENTS
Yeast
Flour
Sugar
Nutmeg
Salt
Pepper(optional)
Milk flavour(optional)
Hello world,am puff puff,am sure you gonna love me.
So i start first by proofing the yeast,i pour half a cup of lukewarm water into a bowl,then i add 3tsp of sugar and 2½ tsp of yeast,mix it and then cover it up to proof for 5-6 mins,when its ready it looks like this.
In another bowl i put two cups of flour,half a cup of sugar (10½tsp),1½tsp of nutmeg,1½ tsp milk flavour,a pinch of salt and 1½tsp pepper,i can use either fresh or grinded pepper buh for today i decided to use the red grinded pepper. Then i make a well in d center of my bowl,pour in my proofed yeast and mix,once in a while i add a bit of warm water because you dont want ur batter to be hard,else you will have a hard snack.i beat the batter until it is smooth,lighter and lump free just like this.
Then i cover it up and leave it to rise for about an hour,you wanna check ur batter from time to time to see when its all risen cause at a point it starts deflating.
My batter is fully risen,i heat some oil in medium heat cause you dont want your oil too hot else ur snacks will burn.since the batter is a sticky one,i dip/wet my hand in water before scooping the batter into the oil,and turning it occassionally.once my desired brownness is achieved,i scoop it out of the oil and my snack is ready.
