Eskom our power utility is in a mess and has been for the past decade causing consumers to cope with no electricity for hours at a time.
They tell us it is because the coal is wet, or generators have packed up, or no facility to store diesel for emergencies - we are all so tired of the excuses when we know that it all falls down to no maintenance has been done for years!
Now just before the festive season we are once again into load shedding and then within a space of a few hours we went from stage 2 to stage 4 and then .... stage 6 - a place we have never been before - in other words we were hovering on the complete breakdown of electricity for the country.
Our President was on a plane on his way overseas when stage 6 hit us and his plane was turned around and he headed back to try and deal with this crisis.
We are back to stage 2 today and are told that although the situation is not desirable, it is not a crisis.
Do we believe them? - NO.
Anyway,enough of politicians.
Planning meals can be a challenge - making things before the power goes off so that families can have their dinner.
Here are a few ideas.
A roast chicken can be a saver - first meal have it hot and then afterwards you have enough to have another meal with salads.
Make some potato salad which keeps well to eat later.
Wraps are great too - prepare some fillings before hand.
And then we can also have a braai (barbie)
Lastly order in a pizza!!
I am so thankful for my herbs and veggies that I grow and can always have a fresh salad on hand and never have to store in the fridge.
