This dish is known as Thukpa in Nepali, also goes by the name Tibetan noodles as it originated from Tibet that lies in present day China. The food flourished from there to northern Himalayas of Nepal and now it is popular all over the Nepal and is one of the popular choice that every hotels, restaurants and other similar services offer. Pre autumn and autumn season is the best time for this dish. Thukpa soup helps you to protect against cold by providing various nutrients and vitamins needed for your body. I hate to eat it during the rest of the season but love it in this weather basically when it is cold, foggy or misty as the pleasure you get from this hot dish is very different. The above Thukpa was made by my friend who seems to be very good in making this one in his own style.
First, the noodle (aka Chowmein or Spaghetti) is boiled and later the water is drained.
Then raw cabbage and small onion pieces is added from the top.
In a frying pan, fry some chickpea and soybeans. In the mixture, grind tomatoes, cumin, ginger and garlic and transfer the paste to the frying pan. Stir the mixture for some time and add water from the top and let it boil for sometime.
After that the soup is then poured into the bowl containing the above noodles. Then it is ready to be served hot and spicy.
