Hello, dear Hive family, I was making mayonnaise for the second time in my life. As it turned out perfectly the first time, I thought it would be the same this time round, but something unexpected happened: my mayonnaise curdled. At that moment, I panicked, because it would have been such a shame to waste all those ingredients. So what I did was take a few deep breaths and call my culinary emergency number: my mum. She gave me several tips that I’d like to share with you in this post. Although, as if that weren’t enough, just as I’d finished speaking to my mum, there was a power cut. So I put everything in the fridge and managed to sort it out the next day.
Mayonnaise ‘separates’ when the emulsion—made up of oil on one side, and egg yolk and vinegar or lemon juice on the other—breaks down. I’d like to share with you some of the causes and the trick for fixing it that my mum taught me.

Adding the oil too quickly is by far the number one cause. The emulsion needs the oil to be added gradually at the start so that the egg yolk can gradually incorporate it. That’s exactly what happened to me. I was in such a rush to make it, as I was worried they’d cut off my electricity, and in the end I did lose power and couldn’t finish making it that day either.
Something my mum always emphasises to me is that ingredients at different temperatures can also prevent the mayonnaise from emulsifying. If the egg yolk is cold (fresh out of the fridge) and the oil is at room temperature, or vice versa, it’s difficult for the mayonnaise to set. Ideally, both should be at room temperature. That’s why, the following morning, when I went to salvage the mayonnaise, I made absolutely sure that the curdled mayonnaise I’d stored in the fridge had warmed up.

The other cause is an imbalance between the ingredients. Too little egg yolk or yolk with too little fat. The yolk acts as the emulsifier; if there is too much oil for the amount of yolk, the mayonnaise will separate; or, conversely, an excess of watery liquid. Too much vinegar, lemon juice or water at the start dilutes the yolk and weakens the emulsion.
You must also bear in mind that over-beating or beating too vigorously can cause the mayonnaise that has already formed to separate. That’s incredibly frustrating, because you can see that it has already changed colour and turned white; yet, suddenly, it goes off.

It’s important to bear in mind that the whisk must be thoroughly clean and dry. It mustn’t have any traces of grease or water, nor should it be dirty or damp. I made a mistake here too, because I didn’t dry the whisk properly; I left it a bit damp.
Something I didn’t know – and which I also got wrong – is that adding salt too early and in excessive amounts can cause the mayonnaise to curdle. Salt can destabilise the mixture if added before emulsification. To be honest with you, and now that I think about it, it would have taken a miracle for my mayonnaise to turn out right, ha ha ha.

Saludos. Hasta la próxima.

Tip for fixing mayonnaise: The ‘reset’ method (according to my mum, the most effective):
Place a fresh egg in a clean bowl, whisk it on its own, and gradually add the separated mayonnaise in a very thin stream, without stopping whisking, as if you were starting from scratch.
Once it regains its consistency, keep adding the rest bit by bit. Thanks to God and my mum’s wise advice, I managed to salvage the mayonnaise. And you lot, do you know any other tricks for fixing run-off mayonnaise? Best wishes. See you next time.
