Mortadella is a rich and savory big sausage brought by italians to Venezuela. There are many factories making them here. It is usually cut in slices to fill the bread or arepas. It is delicious, and in this country it has become the food for the poor people because there are very cheap ones to choose from all the different kind we have. The one named Tapara is the most costly, and is the one I am going to use to make this roll.
Mortadella tapara is made from a cured pork meat and it has black peppers and pistachios which you can see when it is sliced. Some contain green olives and dried fruits like berries. At home, we prepare it with eggs to fill the arepas, and sometimes we fill the bread with it adding ketchup, mustard and mayonnaise. Today I used it to fill this roll so as to make something different. I am using this one because it is the one with more flavor.
Ingredients you will need for the filling:
400 grams of mortadella tapara or the one you can obtain
4 tomatoes
1 bunch of green onions
2 garlic cloves
1 red pepper
1 cup of green olives
olive oil
1 spoon of dried oregano
2 spoons of sugar
salt at taste
Preparation of filling:
Peel the tomatoes and cut in small pieces
Fry them in olive oil and add the 2 spoons of sugar to caramelize them
Cut the chives, red pepper and the garlic
Fry the vegetables apart in olive oil
Cut the mortadella in small pieces and fry in olive oil
To prepare the dough you will need:
3 cups of all use flour
1/2 spoon of salt
1 spoon of olive oil
1 cup of water
7 grams of yeast
1 spoon of sugar
Preparation of dough:
Place in a bowl the flour, salt and the oil
Prepare the yeast in a cup of lukewarm water with 1 spoon of sugar
When the yeast has grown enough add it to the flour and work until you get an elastic dough ready to use.
Don't add more water, work it until it gets to the point of use
Form a rectangle with the roller
First add the tomatoes caramelized
Then add the vegetables and the oregano
Sprinkle a lit bit of salt
Add the mortadella all over the vegetables
Finally place the olives in one of the longest edges and cover with dough before folding it
Start folding the roll, only 2 times and the rest goes on top to seal it with a bit of water
Place the roll on a tray and place in the oven for 30 minutes at 180掳C
When the roll is ready and still hot you can varnish it with sugar cane sirop
Cut in slices and serve hot or cold with a drink
