I've been trying to make somewhat healthier snacks to munch on... my extended holidays are over at last, the time has come to hike 10km or so a day once more, and I'm making it my goal to not indulge like a madwoman when I stumble back through my door in exhaustion.
Normally in the mornings after I return home from dropping off my son at school, I grab whatever easy-to-eat thing there is, sit down under the air conditioning, and refuse to move until 2pm when I go to pick him back up.
(The issue isn't the walk itself -- I rather enjoy walking, but the heat and humidity is horrible and triples any exhaustion and deadness I may feel. Winter is no better - that humidity. Ugh.)
So, I thought that I'd pre-empt myself!! And have a bunch of tasty snackable things within reach, that aren't pre-packaged processed garbage. 😁 I mean, they're still somewhat junky, but they're a helluvalot better then a packet of doughnuts or pack of chips.
This week's snack is...
Apple Walnut Biscuits!
For this recipe, we're going to need:
⭐️ Ingredients ⭐️
- 1 cup of brown sugar, packed
- 1/2 cup of butter, melted
- 1 egg, lightly whisked
- 1 and 1/2 cups of self raising flour
- pinch of salt
- ground cinnamon
- honey, roughly 2 tablespoons?
- 2 granny smith apples, peeled and diced
- 1 cup of sultanas (raisins)
- 1 cup of walnuts, roughly chopped
- handful of white chocolate chips
First of all, we're going to mix together all the main dry ingredients.
I've chopped the walnuts (leaving a few intact and off-side for decorative purposes later), and add them alongside my flour and brown sugar.
After that is well-combined, add in your sultanas and cinnamon.
If you've ever read my recipes before, you will know that I measure with love a lot of the time. The cinnamon I just added is no different. I have no idea how much I added, but it was enough to look good to my eye.
Combine well!
And now it's time to add the most important ingredient - the apple! You could leave them peeled if you like, you'd get more nutrients that way, but I'm weird and enjoy eating the peel after I've removed it from the fresh apple flesh. Soooo, it's all gone. 👀
With all of that combined nicely, now it's time to add our wet ingredients, at last!
With the honey... yes, you guessed it. It's another "measure by love" ingredient. If I had to guess, I'd say maybe two tablespoons? But I really couldn't tell you. I just squirted it all over the place and went, "Yep, looks good."
Last but not least! Well, actually least, there's only a handful there, we add the white chocolate! This is entirely optional. But I couldn't resist.
These biscuits are going to be wonderful and filled with all sorts of different flavours.
Once you've mixed it all together, preheat your oven to 180 degrees Celsius and allow your mixture to sit in the fridge while waiting for your oven. I sat mine in the fridge for around half an hour, but ideally I like to keep the mixture in there for a couple of hours, personally.
Once the mixture has chilled in the fridge for a bit, form into biscuit-sized balls onto your prepared baking tray, decorate with a couple of extra walnuts and white choc-chips if you're feeling fancy, then pop into the oven for about 10-12 minutes.
Because I wanted these a bit crunchier, I cooked mine for about 12 minutes. That really depends on your personal preference -- whether you'd rather a gooey chewy biscuit like your typical choc-chip cookie, or a crunchier thing.
Allow to cool, then prepare to devour! 😁
Well, not me. I'll be devouring these over the course of the week or so when I stumble through the door and grab them. That didn't stop me from stealing a couple fresh off the tray now though. 👀
