Yesterday I made some nachos for a cozy friday dinner, before i went out with some friends for an vernissage. The exhibition on the gallery Påfuglen
I only had a bad Huawei phone to document the process, so sorry about the quality.
So this is the food i bought in, and the chicken i pulled apart
Mix a little bit of olive oil to get the spices to stick. I like to make my own taco spice, but this time i was a bit lazy.
Then add a lot of garlic, chili and dried coriander. Then some lime juice.
Some fresh coriander, one of my most loved spices.

Add the chicken

Some tomatoes, and a box of chopped ones
Next step is the vegetables, and some jalapenos
Time to place in the oven for 20min at 200 degrees celsius
The dinner is served with taco saus, soure cream,guacamole, and some salat (Sadly the avocados a bought wasn't ripe, so had to manage without it. The recipe for that is under the picture.)
My guacamole recipe
First thing, i dont like people that uses a blender to make the guacamole. The best thing is to use a fork to crush the avocados, to maintain the texture.
- 2 Avocados
- 1 Tbsp fine chopped red onion
- 1 Tbsp fine chopped tomatos
- 1/2 Tbsp fine chopped garlic
- 2 Tbsp fine chopped coriander
- 2 Tbsp lime juice
- Salt and pepper
Mix it together and let it sitt for 10-15min so the flavors can combine before serving
