Lamb is definitely one of my go-to meats and I think that it's severely underrated and overlooked compared to other meats on offer.
This recipe is an Indian style lamb and spinach dish and it's a perfect meal to have on a cold winters day; what's more, it's quick and doesn't require too many ingredients.

Ingredients:
• 500g of cubed lamb
• 300g bag of spinach
• 1 red bell pepper, chopped
• 2 onions
• 1 chilli pepper, deseeded
• 1 tablespoon of garlic paste
• 1 clove of garlic, chopped
• 1 tablespoon of ginger, chopped
• 1 tablespoon of garam masala
• 1 tablespoon of cumin
• 1 tablespoon of chilli powder (mild)
• ½ tablespoon of salt
• 1 tablespoon of cooking oil - we use olive oil.

I like to serve this dish with rice, but it also goes really well with cous-cous or potatoes - mashed or whole. When I make this, Elyse eats it all and tends to crave it for days so I love to make it for her. You can make this for up to four people using this recipe or, just make and have the next day (P.S it's awesome the next day as the flavours tend to develop better!).
