Sometimes the best meals are the ones you don't plan.I was just staring at the fridge this afternoon, not really hungry but also tired of the usual. Saw half a cauliflower, a couple of potatoes, some carrots and a zucchini that was about to go soft. I thought, why not throw everything in one pan?
I chopped them into small cubes, nothing fancy. Heated some oil, fried onions first until they smelled good, then added the potatoes and carrots because they take longer. After a few minutes, I tossed in the cauliflower and zucchini. Salt, pepper, a bit of soy sauce and a pinch of curry powder. That's it.
No recipe, no measuring. Just whatever felt right.
The result was this colorful bowl in the photo. The cauliflower stayed a bit crunchy, potatoes were soft and caramelized, carrots added sweetness. It's not restaurant level, but it's home. It's warm, filling, and actually healthy.
I ate it straight from the bowl while watching a match on my phone. Sometimes simple food like this hits harder than any takeout.
