Hoy vengo a mostrarles una merienda que me provocó un montón preparar esta tarde-noche, ya que me iba a sentar a ver una serie con mi mamá, y se trata de nada más y nada menos que de unas deliciosas cotufas acarameladas. A mí me gustan muchísimo; normalmente suelo comerlas combinando lo salado con lo dulce, pero esta vez de verdad quería que se sintiera mucho más ese toquecito dulce y meloso. Así que hoy les traigo el paso a paso de cómo las preparo para que se animen a hacerlas en sus casas y las disfruten tanto como nosotras.

Today I want to share a snack that I was craving so much to make this evening, since I was about to sit down and watch a show with my mom: some delicious caramel popcorn! I absolutely love them; I usually eat them with a mix of sweet and salty flavors, but this time I really wanted that rich, sweet flavor to stand out. So today, I'm showing you my step-by-step process so you can try making them at home and enjoy them as much as we did!
Para esta receta no necesitamos cosas complicadas; solo utilicé mi paquete de maíz para cotufas, azúcar y una mantequilla Mavesa. El primer paso fue poner a precalentar la olla a fuego medio y agregar una cucharada grande de mantequilla. Mientras se iba derritiendo, incorporé media taza de granos de maíz y empecé a remover todo muy bien. El truco de embadurnar bien el maíz con la mantequilla caliente es clave: ayuda a que el maíz no se queme, que quede suelto y que explote mucho más rápido. Una vez que todo estuvo bien integrado, le puse la tapa a la olla y solo quedaba esperar a que ocurriera la magia mientras las cotufas comenzaban a estallar.
Mientras tanto, en otra ollita precalentada a fuego bajo, me puse a preparar el caramelo. Agregué cinco cucharadas soperas bien generosas de azúcar y empecé a remover constantemente para que se fuera derritiendo de forma pareja. Poco a poco el azúcar comenzó a espesar y a tomar forma hasta disolverse por completo, cuidando que no quedara ningún grumito. Cuando el caramelo alcanzó un tono dorado precioso, le agregué una cucharada y media de mantequilla Mavesa. En ese momento notarás que la mezcla empieza a hacer como una espumita, pero es totalmente normal; hay que seguir mezclando con paciencia a fuego bajo para que no se nos vaya a quemar. La mantequilla es el ingrediente secreto aquí, ya que evita que el caramelo se ponga duro demasiado rápido y le da una suavidad y un sabor sencillamente delicioso.
Cuando el caramelo alcanzó ese color cobrizo dorado que tanto me gusta, apagué el fuego. Serví las cotufas que ya tenía listas en un bol grande y fui vertiendo el caramelo caliente poco a poco, haciendo capas y mezclando con cuidado para que absolutamente todas las cotufas quedaran bien bañadas y crujientes. Eso sí, ¡mucho cuidado al probarlas de inmediato! El caramelo recién hecho quema bastante, así que es mejor dejarlas reposar unos minutitos a que se enfríen antes de sentarse a disfrutar.
You don't need anything complicated for this recipe; I just used my bag of popcorn kernels, sugar, and Mavesa butter. The first step was preheating the pot over medium heat and adding a large tablespoon of butter. As it melted, I added half a cup of popcorn kernels and started stirring everything really well. Coat the corn thoroughly in the hot melted butter it keeps the kernels from burning, helps them pop much faster, and gives them a light texture. Once well combined, I covered the pot with the lid and waited for the magic to happen as they started popping away.
Meanwhile, in another small pot preheated over low heat, I started making the caramel. I added five generous tablespoons of sugar and stirred continuously so it would melt evenly. Slowly, the sugar began to thicken and turn into a liquid caramel, making sure there were no sugar grains or lumps left. Once it reached a beautiful golden shade, I added a tablespoon and a half of butter. You'll notice it gets a bit foamy at this point, but that's completely normal; just keep stirring gently on low heat so it doesn't burn. The butter is the secret trick here it prevents the caramel from hardening too fast and gives it a smooth, rich texture that is absolutely divine.
Once the caramel got that lovely golden copper color I adore, I turned off the stove. I transferred the popped corn into a large bowl and poured the warm caramel over it bit by bit, layering and tossing gently so every single piece got coated. Just a fair warning: be very careful if you're tempted to eat them right away! Fresh caramel gets extremely hot, so it's best to let them cool down for a couple of minutes before sitting down to enjoy them.
