La combinación de la esponjosidad del bizcocho con la riqueza de la cajeta y la cremosidad de las tres leches es simplemente irresistible.

PASTEL DE TRES LECHES DE CAJETA 😋
Ingredientes
Para el bizcocho:
5 huevos a temperatura ambiente
150 g de azúcar
150 g de harina de trigo
1 cucharadita de polvo para hornear
1 cucharadita de esencia de vainilla
60 ml de leche
Mantequilla y harina para preparar el molde
Para la mezcla de tres leches:
1 lata de leche evaporada (aproximadamente 360 ml)
1 lata de leche condensada (aproximadamente 395 g)
200 ml de crema de leche o media crema
150 g de cajeta
1 cucharadita de esencia de vainilla
Para decorar:
400 ml de crema para batir muy fría
3 cucharadas de azúcar glas
1 cucharadita de esencia de vainilla
150 g de cajeta
80 g de nueces pecanas picadas

Today I want to share with you one of my absolute favorite and most comforting recipes to sweeten any special occasion: a delicious Cajeta Tres Leches Cake. The combination of the fluffy sponge cake with the richness of cajeta (dulce de leche) and the creaminess of the three milks is simply irresistible.

🍰 Cajeta Tres Leches Cake
Ingredients
For the sponge cake:
5 eggs at room temperature
150 g of sugar
150 g of all-purpose flour
1 tsp of baking powder
1 tsp of vanilla extract
60 ml of milk
Butter and flour for preparing the pan
For the three milks mixture:
1 can of evaporated milk (approx. 360 ml)
1 can of sweet condensed milk (approx. 395 g)
200 ml of heavy cream or table cream (media crema)
150 g of cajeta
1 tsp of vanilla extract
For decorating:
400 ml of very cold whipping cream
3 tbsp of powdered sugar
1 tsp of vanilla extract
150 g of cajeta
80 g of chopped pecans
Step-by-Step Preparation
Preheat the oven to 175 °C (350 °F). Grease and flour a 22–24 cm (9-inch) round cake pan, placing parchment paper at the bottom to make it easier to unmold later.
Separate the egg whites from the yolks. Beat the whites until they begin to foam; gradually add the sugar and continue beating until you get a firm, glossy meringue.
Incorporate the yolks one by one, add the vanilla and milk, and mix gently to avoid losing the accumulated air.
Sift the flour together with the baking powder and fold them in batches using gentle, enveloping motions, taking care not to overmix to keep the sponge cake light and fluffy.
Pour the batter into the pan, smooth the top gently, and bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. Let it rest for 10 minutes before unmolding.
Prepare the milk mixture: Combine the evaporated milk, condensed milk, heavy cream, 150 g of cajeta, and vanilla until you get a smooth, lump-free liquid.
Soak the cake: Place the warm sponge cake in a deep dish, pierce the entire surface with a fork or toothpick, and slowly pour the three milks mixture over it so it absorbs evenly.
Refrigerate: Cover the cake and chill it in the refrigerator for at least 6 hours—preferably overnight—so it fully absorbs the milks and achieves a moist texture without falling apart.
Whip the cream: Beat the very cold whipping cream with the powdered sugar and vanilla until stiff peaks form, being careful not to overbeat to prevent it from curdling.
Decorate and serve: Cover the chilled cake with the whipped cream, drizzle the remaining 150 g of cajeta over the top, and garnish with the chopped pecans.
