Today I wanted to eat something different because we usually make chicken or beef stew for lunch at home, and the smoked pork chop is eaten on its own with a side dish. We almost always grill it, flipping it over until it’s well done, and that’s it—but this time I wanted to eat it a different way. Plus, since there are just the two of us, there wasn’t enough for both of us.

I had a little stewing meat and a pork chop, so I decided to use those to make a delicious stew for our lunch. The first thing I did was take out my stew meat and start chopping it into tiny pieces. At home, I like to eat meat that’s already chopped into small pieces because it’s easier to eat and lets you better appreciate the flavor—it’s just a personal preference—and it saves us a little time at mealtime since we don’t have to chop it ourselves.

I also chopped the smoked pork chop into very small pieces, removed the bone, and mixed it with the meat, setting it all aside while I prepared the rest of the ingredients. I almost always use the same seasonings because I love their flavor, so I used onion, sweet pepper, and paprika. However, I didn’t have any garlic this time, so I couldn’t add it. I chopped everything in my food processor and put it in a skillet to sauté for a few minutes until the seasonings looked at least a little golden brown. After that, once my seasonings were ready, I added the meat and the smoked pork chop—which I’d already cut into pieces—and although it’s true that the smoked pork chop is much more tender and cooks faster, I decided to cook both together so they’d release all their flavor and it would blend into one. To this, I added my usual seasonings: a little salt with oregano, paprika, and annatto-based coloring.

The first thing I did was sauté the ingredients well with the seasonings for a while, and then I added water so my stew would have some sauce to moisten the sides of the dish, although I must admit that I love it when the meat is dry but juicy at the same time. I don’t like eating rice or pasta without sauce, so I decided to make it with sauce right from the start, and my husband also likes being able to moisten his plate with the stew’s juices.I have to say the combination was spectacular. The truth is that the flavor of the smoked pork chop is quite distinctive and strong, which makes it stand out a bit; however, the meat did its job well, and you could really taste the contrast of flavors as you chewed it. I really liked that, since I let it cook for a good while, the meat was quite tender—and of course, the smoked pork chop was too.
That said, the pork chop has its own fat that renders as it cooks, and when you braise it, that fat ends up on the plate. Although it adds great flavor, it is quite fatty to eat, so even though I really loved this combination of meat and pork chop, it’s not something I’ll be eating often. Still, the flavor was top-notch—my husband and I both loved it—and I served it with some delicious rigatoni.
