Black Bottom Cup Cakes - An Awesome Tasty Treat!

I just got done making these, and they are great if you want an easy, quick & not so sweet treat. I am adding the recipe here if you wanna give em a spin. :D

Ingredients

Cheese Filling:
1 - 8 oz. package cream cheese, softened
1 egg
1/3 c. of white sugar
1/8 tsp. salt
1 c. mini semi sweet chocolate chips

Cake Batter:
1 1/2 c. all purpose flour
1/4 c. unsweetened cocoa powder
1 c. white sugar
1/2 tsp. salt
1 tsp. baking soda
1 c. water
1/3 c. vegetable oil
1 tbs. cider vinegar
1 tsp. vanillia extract

Directions:

Preheat oven to 350 degrees. Line muffin tins with paper cups or spray pan with non-stick spray.

In a medium bow, beat the cream cheese, egg, 1/3 cup of sugar and 1/8 tsp salt until fluffy. Stir in chocolate chips and set aside.

In a large bowl, mix the flour with remaining sugar, cocoa, baking soda, and salt. Make a well in the center and add the water, oil, vinegar and vanilla. Stir together until blended. Fill muffin tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.

Bake in pre-heated oven for 22 to 30 minutes. Use a tooth pick to see if the cupcakes are done. Use a wire cooling rack to cool the cupcakes. You should wind up with 15-16 cupcakes.

Try not to go over 1/3 full with the cake batter in the cups, you will get a thicker, harder top on the cupcakes.

Every oven is different, be sure to keep an eye out if you have a fast oven. You don't want to burn them. ;-)
