2 cups all purpose flour
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon ground cinnamon (optional)
1/2 teaspoon Salt
3 Ripe bananas
1/2 cup sugar
2 Eggs
1 teasppon vanilla extract
1/2 cup vegetable oil or melted butter
125g yogurt
Instructions
Prepare a loaf pan by greasing it with butter and lined with parchment paper.
In a medium bowl sift flour, baking soda, baking powder, salt and ground cinnamon. Give it a quick mix and set aside.
In another bowl, mash 3 bananas, then add eggs, vanilla extract, sugar, yogurt and vegetable oil. Whisk to combine.
Add banana batter over the sifted dry ingredients, mix all together until all well combine (don't over mix, when you see no more dry ingredients left, the batter is ready).
Pour the bread batter into the prepared loaf pan.
Bake in preheated oven at 180°C/ 365°F for 50 to 55 minutes or test it by insert a knife at the middle of bread and if came out clean, then the bread is ready.
Allow it to cool on a wire rack before serve it.
