Oven-dried tomatoes are a real treat; they’re preserved in oil and you can add your favourite herbs. These tomatoes are great for all sorts of dishes, adding a delicious, intense flavour, as all their flavours and aromas are concentrated, and with that powerful flavour, they’re a real taste sensation when you eat them.

The way I make sun-dried tomatoes is to dehydrate them in the oven on a low heat for several hours – it usually takes between one and four hours – at a temperature ranging from 100 to 130 degrees Celsius, with the aim of removing as much moisture as possible.

The drying time will depend on your oven; the tomatoes should be dried until they reach the desired level, and you should find the method that works best for you. I leave them in for four hours because I like how they turn out after that amount of time in the oven.

INGREDIENTS

  • Ripe tomatoes
  • Sea salt
  • Sugar
  • Dried oregano
  • Dried basil
  • Bay leaves
  • Garlic cloves
  • Pepper
  • Olive oil

METHOD

Wash the tomatoes and cut them however you like – you can halve them, slice them into rounds or cut them into quarters. I’ve tried all these methods and I like them all. You can also leave the seeds in or remove them, although they’ll take longer to dry if you leave the seeds in.

It takes quite a while for the moisture to be drawn out, so, as a precaution, it’s a good idea to line each tray of tomatoes with greaseproof paper.

Once you’ve cut the tomatoes, place them on a tray and add salt, sugar, oregano, pepper and basil, finishing with a drizzle of olive oil.

Bake in the oven on a low heat (for approximately four hours); you can set the temperature between 100 and 130 degrees Celsius. An important tip to speed up the drying process is that, after the tomatoes have been in the oven for two hours, remove the trays and flatten each tomato with a spatula or fork to release the juices, then return the trays to the oven.

Once the tomatoes are dried, we can store them; we have two options:

✓ We can pack them dry or vacuum-seal them and store them; dried tomatoes lose volume and shrivel, so they can also be stored in sterilised jars.

✓ Preserve them in a jar; I think it’s much better to preserve them in olive oil, as this keeps them slightly moist, and you can add your favourite herbs.

You can store them in sterilised glass jars with olive oil, garlic and bay leaves – they’re absolutely delicious.

The uses for homemade sun-dried tomatoes are endless; they make an excellent ingredient in meals. You can add them to:

  • Toasted bread
  • Pasta sauces
  • Pizza toppings
  • Tomato sauce
  • Salad dressings
  • Red pesto
  • Dips or spreads
  • Sandwiches
  • Rice dishes

And countless other dishes

Tomates Deshidratados Hechos en Casa

Los tomates secos en el horno son una delicia, se conservan en aceite y le puedes colocar tus hierbas preferidas, estos tomates sirven para muchos usos en las comidas, dándole un exquisito sabor intenso, ya que, estos tomates tienen concentrados todos sus sabores y aromas, y con ese sabor potente son toda una bomba explosiva al comerlos.

La forma en que yo hago los tomates secos, es deshidratarlos a fuego bajo en el horno, por varias horas, suele tomar desde una a cuatro horas, con una temperatura que oscila entre 100 grados hasta 130 grados centígrados, con la finalidad de sacar la máxima humedad que sea posible.

El secado dependerá de tu horno, los tomates se deben secar hasta lograr el nivel deseado, y encontrar el método que mejor te funcione, yo los dejo cuatro horas porque me gusta como quedan dejándolos todo ese tiempo en el horno.

INGREDIENTES

  • Tomates maduros
  • Sal marina
  • Azúcar
  • Orégano seco
  • Albahaca seca
  • Laurel
  • Dientes de ajo
  • Pimienta
  • Aceite de oliva

PROCEDIMIENTO

Lavar los tomates y cortarlos a tu preferencia, puedes cortarlos por la mitad, en ruedas o en cuartos, yo he tenido las oportunidades de hacerlos con todos esos cortes, y todos me gustan, también puedes hacerlos con o sin semillas, solo que con las semillas tardará más en secar.

Tardan bastante en el proceso de retirar la humedad, así que, por prevención es bueno colocar papel antigraso en cada bandeja de tomates.

Una vez que hayas cortado los tomates, los colocamos en una bandeja y le añadimos sal, azúcar, orégano, pimienta, albahaca y finalizamos con un chorrito de aceite de oliva.

llevamos al horno a fuego bajo (aproximadamente cuatro horas), puede utilizar una temperatura entre 100 a 130 grados centígrados. Un detalle importante para acelerar el proceso de secado, es que al pasar dos horas con los tomates en el horno, retiramos las bandejas y aplastamos cada tomate con una espátula o tenedor para sacar los jugos, luego volvemos a introducir las bandejas en el horno.

Una vez que los tomates están secos podemos guárdalos, tenemos dos opciones:

✓ Los envasamos secos o envasamos al vacío y guardamos, los tomates secos pierden volumen y se arrugan, se pueden guardar también en botes esterilizados.

✓ Los envasamos en conserva, a mi me parece mucho mejor conservarlos con aceite de oliva, ya que de este modo se hidratan ligeramente, y añades tus hierbas favoritas.

En envases de vidrios esterilizados los podemos colocar con aceite de oliva, ajo, laurel y son una delicia.

El uso de los tomates secos caseros es ilimitado, es un excelente ingrediente en las comidas, puedes añadirlos en:

  • Tostadas de pan
  • Para elaborar salsa para pastas
  • Cobertura para pizzas
  • Salsa de tomate
  • Aderezos para ensaladas
  • Pesto rojo
  • Dips o cremas untables
  • Sandwiches
  • Arroces
