My fellow foodies, dear @CreativeCuisine community, today I bring you this version of carrot and zucchini croquettes. A few days ago, I saw this recipe, and of course, I had to try it to see how it would turn out. In the original recipe, the person used coconut flour, but since I use oat flour more often, that's what I worked with. Obviously, it didn't turn out the same, but as they say, at least I tried.
The ingredients I used were:

Well, once we have the ingredients, the first thing we'll do is grate our carrot and zucchini, then we'll try to squeeze out as much liquid as possible. Well, I tried, but I think this may have influenced the result.
Then we add the rest of the ingredients: onion, paprika, garlic. I cut them into small pieces, but you can grate them if you prefer. Then we add the pepper and the egg.
Next, we're going to add the oatmeal, mix everything together, and finally add the grated cheese.
Now that we have our mixture, let's shape our dough. In my case, I decided to bake them in the oven first to see how they turned out.
But I'll tell you, I'm using a new stove, which has been a headache, ha ha ha, because turning it on is quite a process. It turns out it has an automatic ignition, and honestly, we've had a hard time getting it to turn on. At least the oven works, but slowly. I don't know if that had an effect, or if it was the flour I used, along with the liquid from the zucchini.
The thing is, they ended up very soft because I left them in the oven, so I decided to finish cooking them in the pan, where they browned a little, but were still just as soft.
In the end, that's how they turned out. They tasted pretty good, though鈥攙ery tasty. I liked this combination of vegetables and flour, a good mix, although I don't know what made them turn out so soft. Anyway, the important thing is that they were edible.馃構

SPANISH VERSION

馃構
