I never really had the courage to try cooking this when I was still in the Philippines. I had very little interest in cooking since my mom and my sister were there to do everything for us. All we had to do back then was eat =) . Everything changed though when I started working overseas. Since I have no one to to take care of the cooking for me, I had to try it. In the beginning ---it was really hard but since I get to do it almost everyday ---eventually I became better. I am now able to make food that is edible at last =) (#feelingchef)
So allow me to share with you one of my creations, the star of last night's dinner , a perfect comfort food and one of the best Filipino Dishes of all time : Lechon Kawali
I could've taken better photos of it but we were all excited to eat --this is why there are scattered bits of the pork rinds . ( Spare me on this one)
--- I was already advised by the doctor to avoid eating anything that is fried since I need to manage my weight and cholesterol levels....but HOW on earth can i say no to this ???? -- You get me right??? haha ..
Eating my favorite Lechon Kawali will not be the same without its partner .... Atchara
The combination of both is just lovely. The Atchara/ pickled papaya complements the salty , fatty and crunchy taste of the Lechon Kawali. This is just the perfect combination for me.
I did not expect posting food would be this fun... =) This just made me want to post more of my cooking journey ..but next time I will document the process and have better photos.
