@riverflow. Here is my vegan gluten-free lunch pack.
Healthy gluten-free Norwegian flatbread with hummus.
Making flatbread with seeds and oats.
Ingredients we need :
!/2 cup oatmeal
1/2 cup pumpkin seeds
1/2 cup fax seeds
1/2 cup sunflower seeds
1/4 cup walnuts
1/4 cup sesame seeds
2 tbsp black poppy seeds
1 tsp rock salt
2 tbsp avocado oil
Water to make dough.
Mix all seeds and oatmeal and salt. mix in oil. using 1 and half a cup of water
gradually make the dough. wait for 1/2 hour so all mixture can be sticky enough to flatten.
In the baking tray spread baking paper.
Flatten the mixture in the baking tray Cut marking before it goes in the oven. preheat the oven to 160 c and bake it for around 30-35 minutes.
After 30 minutes take out the tray and make the rectalungar cuts through and turn it over. bake more 30 minutes at 150c and our flatbread are ready. The baking time may vary from oven to oven.
Making hummus
Ingredients:
1 cup cooked chickpeas
4 slices of red sweet paprika
1/4 cup tahini
1 lime juice
1/2 tsp salt
1/2 tsp black pepper
2 cloves of garlic
1/4 cup olive oil
few parsley leaves.
Put ingredients one by one in the mixer. save a few chickpeas and olive oil extra slice of red pepper and parsley leaves for garnish.
Blend it to fine or coarse as desired. stir in olive oil and garnish with parsley, olive oil, and pepper slice.
For lunch, this combination is normally a very good vegan choice but here people commonly use brown goat cheese or different kinds of cheese. jams honey etc.
