Throw one of these guys in your lunchbox this week and leave the granola bar (yes, I’ve been eating the same flavored granola bar the last two weeks too) at home. It will definitely pep up your day. I would say bring milk with too, but that might be pushing it hmm?
Enjoy these! I’m off to work on cleaning out my freezer before moving. By that, I mean I’m going to work on getting rid of the ice cream and make a malt. The work never ends for me, really.
Oatmeal Bars
Ingredients
⅓ cup flour
½ teaspoon cinnamon
⅓ cup old fashioned oats
¼ teaspoon salt
4 tablespoons butter, melted
⅓ cup packed brown sugar
1 teaspoon vanilla extract
1 large egg
½ cup butterscotch chips
Instructions
Preheat oven to 350 degrees. Llightly spray a 6.5 or 7 inch baking pan with nonstick cooking spray.
In a small bowl, stir together flour, cinnamon, oats, and salt. Set aside.
Stir together butter, brown sugar, vanilla, and egg. Add flour mixture and stir until completely combined. Pour batter into the prepared pan and spread out evenly. Bake for 16-20 minutes. The edges of the bars will be slightly golden when done and a toothpick inserted in the center should come out mostly clean. I like to underbake my bars a little bit, but you can leave them in a little longer if you would like. Just keep an eye on the edges.
Cool on a wire rack. Cut into 9 bars. Store leftovers tightly sealed.
Notes
I highly recommend using old fashioned oats. Quick oats will lead to a drier, crumbly bar.
