Luncheon meat and in my case it is made of pork, is some tasty meat made with some curring ingredients, salt and water. Some luncheon meat are also infused with some spices.
Looooooong time ago, when I was a super noob cook at home, when I have not experimented on many dishes yet, this was one of my successful attempts and it is like cheating because the luncheon meat itself is already very tasty.
I suddenly remember this fried rice and I craved for it. Coincidentally there was a can of luncheon meat at home too. So it is like a no brainer thing to cook for the day!
🍚 rice (preferably overnight rice)
🍚 eggs
🍚 any vegetable available (I used baby pak choy)
🍚 a can of luncheon meat
🍚 minced meat
🍚 oyster sauce
🍚 garlic
🍚 garlic butter
First let's heat up the pan or wok and add in some butter. I added garlic butter spread since I had it at home.
Secondly, add in some minced garlic.
Thirdly, when the garlic is fried till all fragrant, time to add in the seasoned minced pork. I just seasoned earlier with some soy sauce, oyster sauce and white pepper. Let's brown the minced meat a little.
Then, add in the luncheon meat which was diced. Brown the luncheon meat as well.
After this is done, add in the white rice. Overnight rice is preferred because it is drier and has less moisture.
Now, add in the washed baby pak choys for extra fiber and nutrition!
Followed by pouring the beaten eggs onto the fried rice.
Try to coat every rice with the egg and to do this, we need to toss and mix the rice thoroughly.
Last but not least, drizzle some oyster sauce to add some taste to the fried rice.
I garnished with some fried garlic and shallots to add some fragrance and crunch to it. Yumsssss, happy tummy! The boys ate their dinner really fast that night, yay!
