Homemade scones! This week I made strawberry vegan scones from scratch and let me tell you it was definitely worth it!
Scones can be eaten plain, dipped in coffee or decorated with icing. For myself I prefer plain so I don't get that burst of sugar in the morning.
Gubba Tip: The scones will see dry and flaky at first until you add in the strawberries. The moister from the strawberries will bring it all together.

Ingredients
3 cups of all purpose flour
1/3 cup raw sugar
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons cold vegan butter
1 cup almond milk
1 teaspoon vanilla extract
1/3 cup chopped strawberries
Instructions
Preheat over to 350F and grease baking sheet
Mix flour, baking powder, salt and sugar. Cut butter to dry ingredients. The mixture should be crumbly with the butter around pea sized.
Combine milk and vanilla.
Form a well with dry ingredients and pour in milk/vanilla mixture and mix until combined.
Fold in strawberries
Create dough into 9 inch diameter circle and cut into 8 triangular pieces.
Place on prepared baking sheet and back for 20 minutes. After 20 minutes, insert tooth pick into the center of the scones and make sure no dough comes out with the toothpick. If it does place back in oven for 5 more minutes and bake until golden brown on top.
