I’ve got a good news, apricots and little fruits season has begun. So why not stock up on fruits but also on vitamins ?
What to do if we have too much fruits ? You can cut and froze them for pies, or make some jam !
Just fruits, that’s it. You can add a drizzle of honey or maple sirup if you prefer sweety things. You can also add the juice of a half lemon if you want to keep it longer !
You can also swap the raspberries for blueberries and/or the apricots for figs for exemple.
For one little jar | Preparation : 5 mins | Cooking time : 25 min approx.
Ingredients :
2 cups fresh apricots or 1 cup of dried apricots
1 cup raspberries
Directions :
Let soak the apricots, if dried, in hot water a few minutes.
Mix the apricots and raspberries in a blender.
In a anti-adhesive pan, on low heat, pour the fruits purée. Let it thicken around 20 to 25 minutes.
Put the jam in a little jar. Let it cool before keeping it in the fridge.
Notes :
If you want to use dried apricots, please by them unsulfured. Choose them brown and organic, that’s important !
You can keep your jam about one to two weeks in your fridge.
