I bought a large stainless steel pot yesterday and decided to try making pork miso soup with it.

Pork miso soup

Pork miso soup is a type of miso soup and a Japanese dish consisting of pork and vegetables simmered and seasoned with miso. It has more ingredients than regular miso soup. Everyone in my family loves it.

I also love pork miso soup because it contains a variety of ingredients, so there is no need to make many other side dishes. Also, because I can make a large amount at one time, it lasts until the next day, so I can reduce the number of times I have to cook. Tonight's dinner consisted of pork miso soup and frozen fried chicken😄

Ingredients (5-6 servings)

400 g thinly sliced pork belly
1/4 daikon radish
1 carrot
1 burdock root
1 bag shimeji mushrooms
1 piece konnyaku
1 tofu
1 green onion
2 teaspoons salad oil
1000 ml water
5-6 tablespoons miso
1 tablespoon soy sauce

1. Cut vegetables and meat

Cut carrots, burdocks, radishes, and green onions. Thinly slice root vegetables so that they can be easily cooked. Cut burdocks as if sharpening a pencil with a cutter.

Cut pork and shimeji mushrooms into bite-sized pieces. In this case, I used pre-cut shimeji mushrooms. If you are using a whole shimeji, remove the hard tip from the shimeji mushrooms.

2. Saute meat and vegetables

Heat oil in a large pot and saute meat and shimeji mushrooms first.

When the pork changes color, add root vegetables and saute further.

3. Add water and bring to a boil

When all is cooked, add water to a large pot.

Cut konnyaku into bite-sized pieces, place in a pot, and wait for it to come to a boil.

When it comes to a boil, remove the lye with a ladle.

4. Dissolve miso

Remove the lye and when the radishes are clear, turn off the heat and dissolve the miso and soy sauce.

Finally, cut tofu and green onions are added. Tofu is added last because it does not need to be particularly cooked and because it loses its shape when added early.

At my parents' house, my mother used to make pork miso soup in a large pot, and my family had many second helpings. It was a simple dish of simmering ingredients and seasoning them with miso, but the broth from the vegetables and meat soaked through and was very tasty. It is also full of nutrition!

昨日ステンレスの大きな鍋を買ったので、早速豚汁を作ってみるとにしました。

豚汁

豚汁は味噌汁の一種で、豚肉と野菜を煮込んで味噌で調味した日本の料理です。普通の味噌汁と比べて具材が多いのが特徴です。私の家族は皆、豚汁が大好きなのです。

もちろん、私も大好きです。何が良いって、これだけで色んな食材が入っているので、他にあまりおかずを作らなくてもよいところです。また一度に大量に作れるので、翌日までもつところも。今日は豚汁と、冷凍の唐揚げをチンして済ませました😄

材料

豚バラ薄切り肉 400g
大根 1/4本
にんじん 1本
ごぼう 1本
しめじ 1袋
こんにゃく 1枚
豆腐 1丁
ねぎ 1本
サラダ油 小さじ2
水 1000ml
みそ 大さじ5~6
醤油 大さじ1

1. 野菜、肉を切る

じんじん、ごぼう、大根、ネギを切ります。根菜類は火が通りやすいよう、薄めに。ごぼうは鉛筆をカッターで削るイメージで切ります。

豚肉、しめじも1口サイズに切ります。今回はあらかじめカットされたしめじを使いました。株の場合は石づきを取ります。

2. 肉、野菜を炒める

熱した鍋に油をひき、肉としめじから先に炒めます。

豚肉の色が変わってきたら根菜類を入れ、さらに炒める。

3. 水を入れて煮る

全体に火が通ったら、鍋に水を入れます。

こんにゃくを1口大に切って鍋に入れ、一旦沸騰するのを待ちます。

沸騰してきたらおたまで灰汁をとります。

4. 味噌を溶かす

灰汁をとり、大根が透き通ってきたら火を止めて味噌・醤油を溶かします。

最後に切った豆腐、ネギを入れて完成です。豆腐は特に火を通す必要がないのと、崩れるのがイヤなので最後に入れるようにしています。

実家でもよく母が大鍋に豚汁を作り、家族は何杯もお替りしていました。材料を入れて味噌で味をつけただけの料理ですが、野菜や肉の出汁が染み出してとても美味しいのです。

タマネギや里芋、いんげんなどを入れても美味しいですよ!
