Creative Sunday | A Delicious Spaghetti Recipe Born Out of Necessity

Happy Sunday dear Hivers, I hope you all are having a good day, have you ever had that day when you had random and seemingly not enough ingredients to make a proper meal but you still ended up making a delicious meal at the end of the day, the day I made this meal was that day for me.

I woke up having plans to make stew and white rice but the power holding company had other plans for me, as I couldn't blend the tomatoes I had bought the previous day, it was my daughter's birthday and I had promised her and her cousins a delicious meal when they got back from school, feeling disappointed, I had to resort to plan B, thankfully I had these ingredients available at home that I could manage and it wouldn't tamper with my later plans for the stew when they eventually restore power.

I also realized that this is a meal for days we don't feel like spending much time in the kitchen but still get to eat a delicious meal of spaghetti, if you are a lover of spaghetti like me then you don't want to miss this recipe, as it is also very affordable.

Ingredients used

  • Spaghetti
  • 1 catcher tomato paste
  • fresh tomatoes
  • bell peppers
  • onions
  • groundnut oil
  • seasoning cubes
  • salt
  • plantain
  • carrots

Process

  • I started by properly rinsing my plantain and vegetables under running water, then chopped them into my desired shapes

  • putting some water to boil in the pot, I added salt and the pack of spaghetti(*I hope you don't break yours}
  • making sure it is not too soft, I filtered the water out of the spaghetti after some minutes
  • Continuing, I fried the sliced plantain to golden brown colour
  • Using the same oil, I fried the tomato paste for a few minutes, before adding the chopped tomatoes, pepper, and carrots, I also added the seasoning cubes( the ingredient proportion is based on your discretion)
  • Finally, I poured the stir-fried ingredients into the drained-out spaghetti, giving it a good stir so the ingredients properly mix, and that's it guys, my spaghetti was ready and it was indeed a beautiful day as we sang happy birthday for my 7-year-old daughter, making her blush, they all ate to their fill and even asked for more🤭.
