Hello! Hivians, how are you doing today? Welcome to my blog. It's another beautiful day in the hive world. Today I am going to be teaching you how to prepare "Bean Cake" yes! Bean cake. I know you have a way of preparing your bean cake but today I will be teaching you my way. Bean cake is called moi moi in Nigeria. It's one of many peoples favourite delicacy.
You will be needing:
Beans
Fish
Palm oil
Salt
Season cubes
Nutmeg
Spring onion
Foil
Banana leaf
Scotch bonnet
Chilli peppers
Onion
Aluminium foil
Step 1
Pick the beans because of stones and dirt, then soak it for about 30 mins and wash to peel off the beans skin.
Note:
The reason for soaking the beans is because I want it to be soft so I can easily peel the beans skin. You can also do this using your blender.
Step 2
Wash your scotch bonnet, chilli peppers and onions.
I remove the seeds in the chilli peppers because I grew up with the notion that it's bitter when it's been added to a dish.
Step 3
Blend together the beans, scotch bonnet, onion. Blend it to your desired texture.
Step 4
clean and Steam your fish with little salt for about 5 mins then bring it down and allow to cool before you proceed to debone it( I mean take off the bones).
Step 5
In the blended mixture I add two teaspoons of salt, 1 teaspoon powdered ginger, 4 season cubes then stirred.
Step 6
Then grate some nutmeg, add the palm oil, and then the fish, give it a good mix. Sprinkle some spring onions.
At this point you could use any sort of container or wrappings for the bean cake. For this tutorial I would be using Aluminium foil and some polythene bags.
Aluminium foil process
For the foil I cut out a square shape according to the size of the bean cake I want, then fold it into two equal parts, seal two open parts by folding them 4 times each to avoid leakage, then through the 3rd opening I poured in some paste and sealed by folding in 4 times.
Polythene bag process
For the polythene bag, I doubled it and then poured in the paste and tied the opening.
In an empty pot I poured in little water and then spread the washed banana leaf inside the pot. It will serve as a steam plate for our bean cake.
Then carefully I placed the aluminium foil bean cake first and then the polythene bag bean cake followed suit. Cover it using one of the banana leaf before putting the pot lid.
This process needs just little water at the point of drying and medium heat. It needs constant checking so it doesn't get burnt. It took 45 mins for it to be properly cooked.
You can enjoy this with pap, garri, custard, or bread.
It came out just the way I wanted, soft and tasty.
