I am no pastry chef and I have very little experience in baking cakes but I at least tried this time, kinda. I didn’t get many photos along the way because baking cakes is so stressful to me.
I started early for once and made the cake base a few days ago already, which was a great choice. I made a rich chocolate, dark cocoa and creme fraiche sponge cake.
I cut the cake in half and made a white chocolate and cream cheese mousse to fill it with. Me and mom both think cakes shouldn’t be overly sweet but instead have well balanced flavours. Nothing worse than cake that literally just tastes like sugar. I decided to balance the sweetness of white chocolate with tart red currants and that turned out to be an excellent decition.
The hardest part is always the frosting and I hadn’t even decided what kind before I had filled the cake. I made the obviously stupid decition to wing it with a chocolate mirror glaze which you are not even meant to pour straight on the sponge. Always trying to freestyle everything… I like a ”naked cake” but because my glaze wasn’t thick enough the drips looked just sad and messy.
I did what I could and then decorated with storebought macarons and freezedried berries.
In the end this turned out to be one of my most delicious cakes and not even the ugliest. Mom enjoyed the cake and liked the look of it too so it was a success. Now we’ll eat cake all weekend long.
