Esta fue la pregunta que me hice un día que estaba haciendo crepas y que casualmente tenía un repollo sofrito listo en la nevera. Pensé que con estos dos elementos podría probar si salían unas lumpias.

De las muchas recetas que he visto de lumpias, en la gran mayoría hacen uso de fécula de maíz, pero mi receta de crepas no lleva este ingrediente; por tanto, no podía saber si esta receta de crepas realmente serviría para preparar unas lumpias.

De igual forma, decidí usar estas crepas y el relleno de repollo para probar.

Para esto preparé una mezcla de harina de trigo y agua que vendría a ser el pegamento para cerrar las lumpias.

This was the question I asked myself one day when I was making crepes and happened to have some sautéed cabbage ready. I thought that with these two ingredients, I could try to see if I could make some lumpias.

Of the many lumpia recipes I’ve seen, the vast majority call for cornstarch, but my crepe recipe doesn’t include this ingredient; therefore, I couldn’t know if this crepe recipe would actually work for making lumpias.

Nevertheless, I decided to use these crepes and the cabbage filling to see how spring rolls would turn out.

To do this, I prepared a mixture of wheat flour and water, which would serve as the “glue” to seal the spring rolls.

Coloqué una crepa en un plato, luego añadí el relleno de repollo y jamón; obviamente, este tampoco es el típico relleno para lumpias que suele tener entre sus ingredientes zanahoria pero podía cumplir con esa función.

Llevo dos bordes de la crepa al centro para abrazar el relleno y luego enrollo; terminé colocando el pegamento en el borde para sellar y proteger el relleno.

I placed a crepe on a plate, then added the cabbage and ham filling; obviously, this isn't the typical lumpia filling, which usually includes carrots, but it worked just fine.

I brought two edges of the crepe toward the center to wrap around the filling, then rolled it up; I finished by applying the glue to the edge to seal it and protect the filling.

En líneas generales puedo decir que si funcionan bien estas crepas para hacer lumpias, sin embargo debo prestar más atención con la cantidad de relleno que coloco pues a algunas no le puse suficiente y por esto una vez fritas les queda como una bolsa de aire entre el relleno y la masa, entonces se desinflan. En cambio las que tuvieron suficiente relleno quedaron con una forma más prolija una vez fritas.

Al momento de freír se debe estar muy atenta, ya que puede pasarse de color de un momento a otro. En esta foto puedes ver una más blanca y otra más tostada.

¡Quedaron ricas y crujientes!

Overall, I can say that these crepes work well for making lumpias; however, I need to pay closer attention to the amount of filling I use, because I didn’t put enough in some of them, and as a result, once fried, they end up with a pocket of air between the filling and the dough, causing them to deflate. On the other hand, the ones with enough filling retained a neater shape once fried.

You have to pay close attention while frying, since they can brown too quickly. In this photo, you can see one that’s whiter and another that’s more golden brown.

They turned out delicious and crispy!
