My memories of Trinidad never leave me, and even though more than twenty years have passed since I was there, you never forget a place where you were happy.
One thing I remember with great love and nostalgia is the food; there, I tried some dishes for the first time that delighted my palate. Among them was roti, a curry beef stew served with flatbread. Those rich flavors and unique textures will live on in my heart.
One thing I regret about that time is not having had the foodie spirit I have now back then. My love for cooking hadn’t fully awakened yet, so I wasn’t interested in delving into how to prepare all the delicious dishes I tried.
A week ago, I was really craving roti bread, so I looked up a recipe to make it (I liked the one by _crafted_by_mk on Instagram); while it didn’t turn out exactly like the one I remember eating, I really liked the final result.
And now it’s time to head to the kitchen!
Ingredientes (Ingredients)
- 1 1/2 cups all-purpose flour.
- 2 tablespoons oil (I used olive oil).
- 1 teaspoon salt.
- 1/2 cup boiling water (and a little more if necessary to form a firm dough).
- Melted butter for brushing the rolls.
Preparación (How to make it)
Place the flour in a bowl and add the salt and oil.
- Añadir el agua hirviendo y mezclar. Amasar hasta formar una bola.
Add the boiling water and mix. Knead until it forms a ball.
Let it rest for twenty minutes. After that time, divide the dough into portions; the size will depend on your preference.
Flatten it, make a cut, and fold it over itself to form a cone. In the image, you can see in blue where to make the cut and the direction in which to fold it.
Once the cone is ready, fold the edges inward to form a disc. Place it on a tray and let it rest for twenty minutes.
Once the cone is ready, fold the edges inward to form a disc. Place it on a tray and let it rest for twenty minutes.
