Una de las recetas que hicimos esta semana en la clase de panadería es el Pan de Frutas. Este es el típico pan dulce con frutas confitadas que solemos encontrar en las panaderías y esta vez aprendimos como hacerlo.
Una cosa que he aprendido en el curso de panadería es que todos los panes, aunque estén trabajados casi con los mismos ingredientes, suelen cambiarse ciertos detalles a la hora de la elaboración y eso es lo que hace que tomen un sabor y una textura diferente.
Además que las cantidades varían y eso también hace que sean distintos. La panadería es todo un arte y he podido darme cuenta de eso en estas pocas clases a las que he asistido.
Esta vez como les dije, voy a compartir la receta para hacer estos deliciosos panes y a detalle para que junto a mi puedan prepararlos en sus casitas. ♥

One of the recipes we made this week in the baking class is the Fruit Bread. This is the typical sweet bread with candied fruits that we usually find in bakeries and this time we learned how to make it.
One thing I have learned in the bakery course is that all breads, although they are made with almost the same ingredients, usually change certain details at the time of preparation and that is what makes them take a different flavor and texture.
In addition, the quantities vary and that also makes them different. Baking is an art and I have been able to realize that in these few classes I have attended.
This time as I told you, I'm going to share the recipe to make these delicious breads and in detail so that together with me you can prepare them at home. ♥
INGREDIENTES || INGREDIENTS
Para la masa madre:
- 75 gr de harina todo uso
- 1 cucharada de azúcar
- 3 cucharadas de levadura
- 120 gr de agua
Para la masa final:
- 150 gr de azúcar
- 2 cucharadas de leche en polvo
- 1 cucharada de sal
- 100 gr de margarina
- 4 huevos
- 1 cucharada de vainilla
- 100 gr de frutas confitadas
- 1 kg de harina de trigo todo uso
- 200 gr de agua
For the sourdough:
- 75 gr of all-purpose flour
- 1 tablespoon of sugar
- 3 tablespoons of yeast
- 120 grams of water
For the final dough:
- 150 grams of sugar
- 2 tablespoons of powdered milk
- 1 tablespoon of salt
- 100 gr margarine
- 4 eggs
- 1 tablespoon vanilla
- 100 grams of candied fruits
- 1 kg all-purpose flour
- 200 grams of water
Comenzamos mezclando en una taza todos los ingredientes para la masa madre. Esta debe ser una de gran tamaño ya que esta mezcla comenzará a fermentar y ganará mucho volumen.
Se deja fermentar por unos 20 minutos o hasta que notemos que aumentó el triple su volumen.
We begin by mixing all the ingredients for the sourdough in a bowl. This should be a large one since this mixture will begin to ferment and will gain a lot of volume.
It is left to ferment for about 20 minutes or until we notice that it has tripled in volume.
El un bowl grande vamos a agregar la harina de trigo y haremos un volcán en el centro.
En el vamos a colocar la masa madre lista, luego el agua, los huevos, el azúcar y vamos mezclando para disolver el azúcar sin integrar aún a la harina.
In a large bowl add the wheat flour and make a volcano in the center.
In it we are going to place the ready sourdough, then the water, the eggs, the sugar and we are going to mix to dissolve the sugar without integrating it to the flour.
Agregamos la leche en polvo y comenzamos a integrarla con el harina y los líquidos. Una vez se hayan absorbido todos los líquidos agregamos la margarina y comenzamos con el amasado.
Add the powdered milk and begin to integrate it with the flour and liquids. Once all the liquids have been absorbed, add the margarine and start kneading.
Pasamos al mesón y comenzamos a amasar con movimientos envolventes y haciendo presión con la palma de la mano.
Entender esta técnica es súper importante para lograr una masa suave y moldeable.
We move to the counter and begin to knead with enveloping movements and pressing with the palm of the hand.
Understanding this technique is very important to achieve a soft and moldable dough.
La masa se deja reposar por unos 15 minutos y luego vamos a desgasificar y cortar en porciones de 60 gramos.
Estas porciones luego las vamos a doblar cada una hacia el centro y luego colocamos sobre el mesón para bolear y lograr unos pancitos bien redondos.
The dough is left to rest for about 15 minutes and then we will degas and cut into portions of 60 grams.
These portions are then folded towards the center and then placed on the counter to roll and get a round loaf.
Colocamos sobre una bandeja engrasada y los pincelamos con una mezcla de leche, yema de huevo y azúcar.
Place them on a greased tray and brush them with a mixture of milk, egg yolk and sugar.
Ahora llegó el momento de colocarle las frutas. Lo ideal es colocárselas a la masa y también en la superficie a los panes, pero como nosotros no contábamos con tantas las colocamos solo en la superficie.
Por ultimo espolvoreamos un poco de azúcar en cada uno de ellos.

Por último los dejaremos reposar por unos 45 minutos en un lugar cálido y luego llevaremos al horno por una media hora o hasta que estén bien cocidos y doraditos.
