Ingredients

🧈 2 sticks of unsalted butter at room temperature
🧂 2/3 cups sugar
🍦 1 tablespoon vanilla extract
🥚 1 egg
🌾 2 and 1/4 cups flour
🍇 Raspberry preserves (or any preserves or jam of choice)
❄️ Powdered sugar

Instructions

1- Preheat Oven:

  • Begin by preheating your oven to 350°F (175°C).

2- Cream Butter and Sugar:

  • In the bowl of a stand mixer, combine the butter and sugar.
  • Beat them together, gradually increasing the mixer speed to medium-high until the mixture is well-combined and creamy.

3- Add Egg and Vanilla:

  • Scrape down the sides of the bowl.
  • Add in the egg and vanilla extract, then beat again until everything is fully incorporated.

4- Incorporate Flour:

  • Scrape down the bowl once more.
  • Add the flour.
  • Mix until fully combined and a smooth dough forms.

5- Form Cookie Dough Balls:

  • Using an ice cream scoop, portion out the dough into balls that are about 1 tablespoon each.
  • Roll each ball thoroughly to ensure it is smooth and without cracks.

6- Prepare For Baking:

  • Arrange the dough balls on a baking tray lined with parchment paper, leaving about 2 inches of space between each.
  • Gently press an indent in the center of each cookie with a 3/4 or 1/2 teaspoon, or simply use your thumb.

7- Fill with Preserves:

  • Spoon raspberry preserves or your chosen jam into each indent, filling it to the top.

8- Bake:

  • Place the cookies in the oven and bake for about 15 minutes, or until the bottoms and edges are just lightly golden brown.

9- Cool and Serve:

  • Allow the cookies to cool completely on the tray.
  • Once cooled, dust them with powdered sugar before serving.
