Christmas dinner is the dinner you eat on Christmas!
Holidays are a great time to add a bit of love to the food you cook and share. Even on other days, making a meal can be a lot of fun. I want to post this simple recipe, which happens to taste amazing. If you do decide to make it, I hope you enjoy!
You will need:
Salmon Fillets
Bruschetta Topping
Asparagus
Baby Potatoes
Butter
Salt
Pepper
Yogurt Salad Dressing
I bought a jar of semi-dried tomato bruschetta topping at the store, but of course, you can make your own from scratch. The important part is the olive oil base that has been infused with flavor. This is what you will cook your salmon in.
Heat the bruschetta topping in a frying pan, and add a bit of salt and pepper to the salmon. Once the oil is hot, add the fish to the pan and cook as normal. By the time it is finished, the semi-dried tomatoes will be cooked as well, and their flavor will have soaked into the fish.
Melt the butter and brush it over the asparagus, adding salt and pepper, then heat in a frying pan for approximately 5-7 minutes. My potatoes were designed to be steamed in the microwave, but you can steam yours however you choose and add butter and parsley for flavor. Drizzle the yogurt dressing on top when they're ready, then serve and eat.
