This is one of the things my kids always ask for (even though they are grown up now)...now their kids chime in too...
I have no clue where the original recipe came from. I got it from a grandmother, who got it from a friend, who got it from____. I am sure it has been tweaked so much it could be nothing like the real original.
The Original - as I know it
Apple Nut Bread
Gradually add sugar and vanilla to eggs; beat until light and fluffy
Combine dry ingredients, add to sugar mixture alternately with oil and sour cream, beating well after each addition. Stir in apples.
Spoon batter into 2 greased and floured loaf pans...bake at 350* F for 1 hour, or until you get a clean toothpick.
Let cool for 5 minutes, then turn out on wire racks to finish cooling.
So that is what is on the recipe card I still have, but as my girls found out when they tried it, that is not how I make them. :)
My tweaked recipe
Fruit Muffins
Mix the eggs and sugar, then set aside while the sugar melts in...add vanilla, nutmeg and cinn...mix with a whisk until fluffy. At this point I add in all the oil and mix well.
Sift or mix the dry ing together...add to the liquids and mix. Batter should be just moist and heavy.
If using apple sauce or mashed banana, they should have enough liquid to make the batter perfect. If using a chunked fruit, or drier fruit, then add some milk, or juice to make it like a thick cake batter.
I use cupcake papers and tins, because it is easier for people to grab a muffin. Bake on 350* for about 40 min, or clean toothpick.
