Sharp cheddar cheese, smoky bacon, and beef rolled up in a crispy whole grain crust. Cut the fat by replacing some of the cheese with a surprising (veggie!) ingredient. Tastes just like a bacon cheeseburger that’s easier to eat and has less fat!
I’m really not that big a fan of cheeseburgers or burgers in general. It always seems like a good idea but once I get into it it’s just a little too much. I’d rather order a plate of appetizers to be honest. This recipe may not make the most attractive dinner you’ve ever had but it’s the perfect (healthier!) alternative for those times when you just need a little bacon and cheese. It’s the perfect option for picky eaters and a crowd- it’s easy to slice up and take what you want.
In order to shorten the preparation process I skipped making my dough from scratch and picked up a bag of whole wheat pizza dough.
Serve this with a quick side salad and you’ll have an easy weeknight dinner!
1 package whole wheat pizza dough
1 lb lean ground beef
1/2 cup onion, chopped
3 slices bacon, fried and chopped
salt, pepper
1 cup Creamy Cauliflower Sauce (or any vegetable sauce)
1/2 cup cheddar cheese
garlic powder (optional)
Preheat oven to 400 degrees.
Brown ground beef with onion in a skillet. Drain off fat then season with pepper and salt. Add cauliflower sauce, cheese, and bacon and cook over low heat until cheese is completely melted.
Roll out pizza dough into a rough rectangle. The dough should be about 1/4 inch thick when you are done. I used my cookie sheet as sort of a template for the size I needed.
Carefully spread meat and cheese mixture over the dough and spread out evenly. Be careful not to press too hard or it will start to break the dough. Starting end the end closest to you, begin rolling up the dough towards the other end. It is basically the same technique as rolling up cinnamon roll dough. Once the dough is completely rolled up, pinch the ends to seal the dough and tuck outside ends under dough. VERY carefully lift the roll onto a greased cookie sheet. I find it helpful to use a few spatulas and transfer it onto the pan. If your pan is big enough and doesn't have an edge, you can just roll it up on the pan and slide it in place after you roll it up.
Bake for 20-25 minutes, slice, and serve. Enjoy!
