If you're on a diet like me and you miss a nice slice of bread, do not despair. There's light at the end of the tunnel! And sweet potato toast in the oven is the solution to your morning appetite. It takes half an hour to make but you can always bake the slices of sweet potato from yesterday and toast them at the moment. The recipe is from The Real Food Dietitians blog.

You will only need a large, washed and very dry sweet potato and the following toppings: avocado, smoked salmon, purple onion and capers, sesame seeds, finely chopped radishes, cherry, sliced ​​lime, peanut butter, cashew butter or almond, banana slices, pieces of fried bacon, blueberries and cinnamon.

Begin by pre-heating the oven to 180º C and prepare a grill on top of a tray. Cut the ends of the sweet potato with a knife and then cut the sweet potato into slices about a half centimeter thick. Arrange the slices on the rack and bake for 15 to 20 minutes or until the slices are tender. Be careful not to let them burn.

Remove the slices from the oven and allow them to cool before storing them in a closed container in the refrigerator. They last 4 days. Then just toast them in the toaster until the ends are crispy!

But if you want to eat them soon, make the following combinations with the list of toppings that we suggest:

  • cashew or almond butter, blueberries and cinnamon

  • avocado, radishes, cherry and sliced ​​lime
