Batch Cooking - Rustic Minestrone with Bacon

To save time and have easy freezer meals that I can take to work I like to batch cook, this weekend I managed to cook up a nice pot of chunky minestrone Soup for the coming cold weeks.

Ingredients
2 Carrots, cut into small chunks
2 Celery stalks, cut into small chunks
1 Onion, roughly chopped
12 Rashers back bacon, fat removed and cut into bite size strips
2 Garlic cloves, finely chopped
1 tsp Chopped rosemary
1 tsp Dried thyme
3 tbsp Tomato purée
400g can chopped tomato
400g can Cannellini beans, drained
1.2 litres Chicken stock
50g Dried spaghetti, broken into small pieces
100g Kale, roughly chopped

Method

  • Place a casserole dish on a low heat. Add the carrots, celery, onion and bacon and stir-fry for 2 minutes
  • Stir in garlic, herbs and tomato purée and cook for 1 minute
  • Add tomatoes and most of the stock then bring to the boil
  • Cover and reduce the heat to very low and cook for 50 minutes stirring occasionally
  • Stir in beans and pasta, add kale and cook until pasta is tender
