We meet Maslenitsa

Since long ago there is a tradition in Russia to say “goodbye” to winter and “hello” to spring. Farewell to the winter lasts a week, this week is called Maslenitsa. The pancakes are the main attribute of this festival because a pancake is a symbol of the sun. This is recipe of gluten-free and low carb pancakes
Gluten-free and low carb pancakes 🥞

• 2 tbsp butter or ghee
• 3 tbsp cream cheese (like mascarpone, Philadelphia)
• 3 eggs
• 3-4 tbsp almond flour
• pinch of salt
• 1/3 tsp baking soda
  Melt butter and cheese, stirring, add flour and salt, into the cooled mixture add eggs and baking soda, bake in a pan. Toppings of your choice. My favorite: salted fish 🐟and soft cheese 🧀 or mascarpone and berries 🍓
