It's mom's birthday in two days and I can't get her gift, I face she doesn't want a cake or anything. Been thinking of how to celebrate her day with her even if it's little after all theirs lockdown, no fancy dinner, no road trip, no parties. Couldn't sleep all night cos I was trying to keep on work while brainstorming on something she might appreciate so yes I came up with the idea of baking a cake, she doesn't want a cake so it's not a birthday cake just dessert, not everyone can say no to a dessert.
Ingredients
All purpose flour
Napa Valley cooking margarine
Granulated sugar
Eggs
Vanilla flavour (powdery)
Nutmeg
Baking powder
And of course the electric oven
Not a big fan of dried fruits would have added a little
Method
Started with creaming 125g of margarine with 60g of sugar till it's all blended in
Shift 125g of flour into a clean bowl, add baking powder, nutmeg and powdered vanilla flavour and mix well.
Whisk 5 eggs till fluffy and add it to creamed margarine and sugar in portions while incorporating the multipurpose flour which is laced with other dry products.
Mix the batter till desired and pour in a greased pan, I improvised for mine. I added chocolate to one and made the cupcakes just plain
Preheated the oven for 10 minutes before I started baking.
It turned out nice and she loved it, not much but definitely better than nothing
The lockdown isn't bad after all, been a while I enjoyed baking
