Thanks to all mothers

With all the love we got from our mothers, it’s time to say thank you. Here comes my one for my mother and the mother of my kids.

You’re the spark that starts the day,
In your love, we find our way.

A steady heart, a warm embrace.
From morning rush to evening’s rest,
You give your all, you give your best.
No cape, no crown, just endless care,
A quiet strength that’s always there.
Through every laugh, through every ache,
You light the path we choose to take.
So here’s our gift, sincere and true-
We made a cake for you.

To be honest, this is self made with a lot of love ❤️ fresh strawberries 🍓 and vanilla pudding - but it is not made by myself - my lovely daughter made it. Thanks 🙏

The recipe

Enjoy and redo my „Strawberry Cake with Vanilla Pudding and Fresh Berries“

Here we go

Ingredients

Vanilla Cake

  • 150 g all-purpose flour (1 ¼ cups)
  • 1 ¼ tsp baking powder
  • ½ tsp salt
  • 175 g granulated sugar (¾ cup + 2 tbsp)
  • 85 g unsalted butter, softened (6 tbsp)
  • 25 g vegetable oil (2 tbsp)
  • 1 tbsp vanilla extract
  • 60 g sour cream (¼ cup)
  • 100 g whole milk (¼ cup + 3 tbsp)
  • 2 egg whites

Vanilla Pudding Filling

  • 1 packet instant vanilla pudding mix (96 g)
  • 335 g (1 ½ cups) heavy cream
  • 115 g (½ cup) whole milk

Fresh Strawberries for Topping

  • 300-400 g fresh strawberries (about 2 cups), whole or halved depending on size

Instructions

1. Bake the Vanilla Cake

  • Preheat oven to 350°F (175°C). Grease and flour a 7-inch round cake pan.
  • In a bowl, sift together flour, baking powder, and salt.
  • In a large bowl, beat sugar and butter until light and fluffy. Add oil, vanilla, and sour cream, mix well.
  • Add dry ingredients alternately with milk, beginning and ending with dry ingredients. Mix until just combined.
  • In a separate bowl, beat egg whites until stiff peaks form, then gently fold into batter.
  • Pour batter into pan and bake 35-40 minutes or until a toothpick inserted in center comes out clean. Cool completely.

2. Make the Vanilla Pudding Filling

  • In a bowl, whisk instant vanilla pudding mix with heavy cream and milk for 2 minutes until thickened. Chill in fridge for 15-20 minutes to set.

3. Assemble the Cake

  • Slice the cooled cake horizontally into two layers.
  • Spread half the vanilla pudding evenly over the bottom layer.
  • Place the second cake layer on top and spread the remaining pudding over it.

4. Add Fresh Berries

  • Arrange the fresh strawberries generously on top of the pudding layer. For a striking look, place whole berries standing upright or halved berries with the cut side facing up.

5. Chill and Serve

  • Refrigerate the cake for at least 1 hour before serving to allow the pudding to set and flavors to meld.

Tips

  • Use the freshest, firm strawberries for the best presentation. We get this at the local market.
  • You can lightly dust the berries with powdered sugar just before serving for a delicate sparkle.
  • For extra flavor, brush the cake layers with a little strawberry syrup or juice before adding pudding.
  • Have it in a nice shape

Anyway - the mother was very happy, not at all hungry and got walked into the park the burn a bit of the cake. All this with a big and bright smile 😊 from all the love 💕
