Feliz noche amigos de Hive Food hoy quiero compartir con ustedes como me fue el día de ayer, que a pesar de ser un día feriado en la isla tuvimos clases y nos tocó ver clase de gelatinas. Ya estamos en el nivel intermedio y cada día se siente la presión de hacer las cosas cada vez mejor.
Good evening, Hive Food friends. Today I want to share how my day went yesterday; even though it was a public holiday on the island, we had class specifically, a lesson on making gelatin desserts. We are already at the intermediate level, and every day I feel the pressure to do things better and better.
Al llegar a la cocina como somos el turno de la tarde ya la chef tiene toda la información copiada en la pizarra y al pasar empieza a explicar y nos divide en grupos. A mí y una de mis compañeras nos tocó preparar el ganache de chocolate oscuro.
When we arrived in the kitchen since we were the afternoon shift the chef already had all the information written on the whiteboard; she began explaining it right away and divided us into groups. A colleague and I were assigned to prepare the dark chocolate ganache.
Una vez preparamos el ganache de chocolate oscuro y el ganache de chocolate la profesora procedió a hacer el armado de las tortas ya que íbamos a preparar una jelly cake y una island cake.
Once we had prepared the dark chocolate ganache and the chocolate ganache, the instructor proceeded to assemble the cakes, as we were going to make a jelly cake and an island cake.
Mientras la profesora iba adelantando algunas cosas, nosotros fuimos cortando fruta en láminas para la jelly cake y mis compañeras fueron haciendo figuras de chocolate blando para colocarlas en la island cake.
While the teacher got a head start on a few things, we sliced fruit for the jelly cake, and my classmates made shapes out of soft chocolate to place on the island cake.
Terminamos de armar todo y limpiar la cocina y la verdad que tuvimos bastante tiempo libre, pero debíamos esperar que las gelatinas estuvieran listas y esto es un proceso que lleva su tiempo. Algo que todos aprendimos ayer es que las gelatinas se hacen en el refrigerador, por nada del mundo deben meterse en el freezer.
We finished setting everything up and cleaning the kitchen, and honestly, we had quite a bit of free time; however, we had to wait for the gelatin to set, and that is a process that takes a while. One thing we all learned yesterday is that gelatin sets in the fridge under no circumstances should it be put in the freezer.
Sin lugar a dudas venía la parte más difícil de todo esto y era desmoldar la jelly cake y es que quedó bastante grande y desmoldarla fue un reto bastante grande.
Without a doubt, the hardest part of the whole process was unmolding the jelly cake; it turned out quite large, and getting it out of the mold was a major challenge.
Luego de desmoldarla procedimos a colocar la imagen arriba es una especie de transferencia que se hace. Yo hace muchos años hacía gelatinas con mi mamá, pero nada como ver clases y aprender todo de una forma mucho más técnica.
After unmolding it, we proceeded to place the image on top it’s a type of transfer technique. I used to make gelatin desserts with my mom years ago, but nothing compares to taking classes and learning everything in a much more technical way.
Luego procedimos a desmoldar la island cake, la gelatina de esta quedó un poco oscura pero quedó genial. Es increíble estudiar algo que amamos tanto y mejorar tanto. Se que tal vez mi profesora y mis compañeros no lo saben pero estar estudiando ha salvado mi vida y le ha dado un rumbo diferente.
Then we proceeded to unmold the "island cake"; the gelatin layer turned out a bit dark, but it looked great. It is amazing to study something we love so much and to see such improvement. My teacher and classmates might not realize it, but studying has saved my life and given it a new direction.
